My husband bought me a GOTHAM Steel Copper Pan and my daughter bought me a Copper Chef Pan for my birthday. Great minds think alike.
Although I own a complete set of Green Pans, I wanted to try the pan, because despite loving my Green Pans, curiosity got the best of me. I am not a big infomercial person, but I will admit, I was tempted.
I tested it several times to make sure it worked for a variety of dishes. I sautéed mushrooms and onions without any vegetable broth or water, and nothing sticked at all. In fact, cleaning the pan was easy. I cooked hash browns with only onions and seasonings, and they came out perfectly crisp without any residue in the pan. I was shocked how crispy and perfect cooked they were, and I didn’t add an ounce of vegetable broth.
I am thoroughly impressed with both pans! Both pans can be hand washed or washed in the dish washer. Any utensils are permitted, including metal (which I did not attempt, as I would never use metal in a pan). It even goes in the oven. The only suggestion I would make is for a cover for the handle, because it gets hot. But that is the only negative I see so far. It is its PTFE/PFOA/PFOS-Free and ceramic reinforced with titanium. I will keep you posted if I notice anything negative while I use it, but I think I’m in love.

Please provide an update on this after some more time has passed. I am intrigued by this product too but amazon reviews all have updated saying the pans effectiveness wore off after a few months and everything sticks horribly. Thanks!!

It clearly says not to cook over medium high, or medium in Green pans, and to wait until they are completely cooled before washing or even putting water in it after cooking.

Thank you Kathy. I seriously appreciate your review. I have been on the fence with this issue. I did not learn early enough with the green pans and also my ceramic pans that the key to keeping them pristine and non-stick is to keep the heat no higher than medium-high. Once I learned that, my subsequent purchases have worked as advertised. Because I have been successful with my others, I haven’t purchased any of the copper ones, but loving cookware, I have wanted to anyway. Your review may get me off the fence. Thanks again.
Great news about the pan! The sceptic in me wants to know if there will be chemicals leaching similar to teflon?
They say no, because of the titanium and copper, but you know as well as I do, they may change their minds later. Forget all the TV hype, There is nothing like a well seasoned CAST IRON PAN! and only use one for egg’s only and you will never have a sticking problem. And they will last forever unlike the nonstick pans which wearout fater 6 or 7 months.
