Are you looking for a sublimely vegan lasagna you will never forget? Paul and I go to Sublime, Ft. Lauderdale’s famous vegan restaurant, every time we visit Ft. Lauderdale. I’m headed there after Christmas for a girl trip through New Years, so I am inspired to make this dish for Christmas dinner. Maybe its because my feel guilty for leaving my husband.
Everything written about Sublime is true; it is a truly gourmet vegan experience, and there is no way to possibly eat everything you want to try on the menu. Typically, we order way too much food, and split everything, so we can both enjoy the multitude of choices available on the menu. The best item on the menu is their lasagna. It is so good, you don’t want to finish because when its gone, you are going to want more, even if you are full. The cookbook does not give away its secret, so I had to do my best to duplicate its texture, flavors, and delicate layers. Last night, I think I finally nailed it.
The key is the frozen spinach instead of the fresh spinach I usually use, and the amount of fire roasted tomatoes. The rest is important, but these two key components, give it the “sublime” yum I crave.
