In an attempt to make a hearty soup, I inadvertantly created a crushed lentil stew. With food experimentation sometimes comes success. Crockpot Curry Crushed Lentil Stew was just that; created by accident. Although my original attempt failed, the aftermath was more than I had hoped for.
Yesterday, I had a ton of appointments and knew I wouldn’t have a lot of time to think about dinner. So, I grabbed the crockpot, and few things from the pantry and refrigerator, and the crockpot did the rest. When I got home, the smell in the house was incredible.
Although I thought I was making soup, a stew awaited me when I walked in the door, so I worked with it. I added the last few ingredients and tasted a plethora of flavors and clearly fell in love.
When using lentils, it is extremely important to take the 5 minutes to rinse them and remove and stones or rocks that may be in the bag. Although I have yet to discover any such thing in a bag of lentils, the color of the water that rinses through is definitely not clear. So, you should take my advice and rinse lentils prior to use.
For this stew, I used red lentils, but you may choose any color you prefer. I also used curry powder and red pepper flakes as my primary spices. Remember, you can always add more spice, but you can’t take it away. So, add an amount you feel meets your tastes, and add more if you like it to have stronger flavors.
