Of course, my favorite easy one-pot meals are healthy, with no oil and all plant-based ingredients. Another great bonus to making easy one-pot meals is the easy-to-reheat leftovers for the week.
Even though many of my one-pot meals include pasta, rice makes a great substitute. For those gluten-free or avoid pasta altogether, my one-pot meals require very little pasta. And, gluten-free pasta works perfectly well with each recipe.
