Whenever I'm in a hurry, which is often, I make easy one-pot meals. Not only are one-pot meals easy to make, but they also require minimal ingredients, little time, and even easier cleanup.
Of course, my favorite easy one-pot meals are healthy, with no oil and all plant-based ingredients. Another great bonus to making easy one-pot meals is the easy-to-reheat leftovers for the week.
Even though a lot of my one-pot meals include pasta, rice makes a great substitute. For those people who are gluten-free, or avoid pasta altogether, my one-pot meals require very little pasta. And, gluten-free pasta works perfectly well with each recipe.
So, if you're looking for easy one-pot meals, try these quick and easy plant-based one-pot meals.
Enchilada Pasta
Enchilada pasta recipe is made in one pan in under 20 minutes. Not only is enchilada pasta easy to make, but each bite will bring you back for more. Full of lentils and vegetables, enchilada pasta tastes like enchiladas in a bowl.
Kimchi Fried Rice
My version of kimchi fried rice is oil-free, loaded with vegetables and fabulous flavors. Topped with kimchi grilled tofu and crumbled seaweed, this bowl of rice is a meal with all the nutritional benefits needed in a day. And, it cooks in a wok in 15 minutes.
Lemon Pasta
Creamy lemon pasta cooks in under 20 minutes in one-pot. Loaded with kale, asparagus, artichokes, peas, and onions, this lemon pasta is so creamy, you won't believe how delicious it is.
Vegan Baked Beans
Vegan baked beans are a great side dish for a barbeque or picnic, or an entree with Carrot Dogs. Full of fresh ingredients and oil-free, vegan baked beans are low in sugar and healthier made at home.
Spinach Artichoke Pasta Recipe
In order to make spinach artichoke pasta, the only prep work required is chopping some vegetables. Other than that, once everything is in the pot, you cover it and walk away. As a result, you get a savory, creamy, spinach artichoke pasta recipe with little to no effort.
Vegan Pasta Primavera
Basically, vegan pasta primavera is pasta and vegetables. But my vegan pasta primavera is different, because of it's oil-free light and creamy garlic lemon sauce. And, let's not forget, it all cooks in one pot.
For instance, a typical pasta primavera recipe uses olive oil as the sauce. Since I don't cook with oil, my vegan pasta primavera recipe is fresh and light.
Although any pasta can be used for vegan pasta primavera, I chose penne pasta. A lot of recipes, for instance, suggest Fettucine or spaghetti noodles. However, I prefer penne because it works well with bite-sized vegetables.
Vegan Jambalaya Recipe; Quick, Easy, and Spicy
Jambalaya, which is a Louisiana rice dish, originated in Spain and France. Although traditionally meat-based, Jambalaya can easily be transformed into a plant-based dish, maintaining the essence of the flavors and heat of typical jambalaya. For a quick and easy meal, vegan jambalaya is ready in 30 minutes from start to finish. Vegan jambalaya is loaded with veggies, brown rice, and beans. It all goes in one pot, so clean-up is a breeze.
Fajita Pasta
Although I love vegan fajitas, I adore one-pot meals. So, I decided to combine my Vegan Fajitas recipe with the comfort of whole-grain pasta to make fajita pasta. Not only is fajita pasta creamy and delicious, but it’s full of vegetables in a creamy slightly spicy broth. Then, I top my fajita pasta recipe with cool slices of avocado, Vegan Sour Cream, jalapenos, and cilantro.
Butter Bean Recipe
My butter bean recipe is a simple one-pot meal loaded with Spanish flavors and vegetables, simmered to enhance the robust flavors. As an entree or a side dish, this butter bean recipe is savory and delicious. Get all your greens and beans in one fabulous bowl.
One-Pot Tomato Basil Pasta
Throw all the vegetables and beans in the crockpot and let it brew. Get all your veggies and beans in one delicious bowl and do little to nothing to prepare it. Vegetable soup with beans is so delicious and leftovers can be frozen...if you have any.
Although I chose whole-grain spaghetti pasta, you can use gluten-free pasta, or a different type of noodle if you choose. Additionally, with a few simple ingredients, you can create a savory simple one-pot tomato basil pasta.
Another benefit is the cost of a one-pot tomato basil pasta recipe. For a family of 6, for instance, tomato basil pasta costs $6.32 with very few ingredients.
Vegetable Soup with Beans
Throw all the vegetables and beans in the crockpot and let it brew. Get all your veggies and beans in one delicious bowl and do little to nothing to prepare it. Vegetable soup with beans is so delicious and leftovers can be frozen...if you have any leftovers. Don't have a crockpot, make it in 20 minutes in one-pot.
Vegan Cajun Pasta
When I’m feeling spicy, nothing tastes better than vegan cajun pasta! Not only is vegan cajun pasta easy to make, but it is also one of my favorite one-pot wonder meals. When the kids are licking every drip of sauce from their forks and dreading their bread in the bottom of the bowl, it's a success.
Pesto Pasta with Mushrooms
Not only is pesto pasta with mushrooms easy to make, but it also has very few ingredients, which makes cooking in one-pot even easier. I absolutely love mushrooms! In fact, I think mushrooms go with pasta as peanut butter goes with jelly. Oil-free pesto is easy to make!
For those of you who want to lose weight, I always have a small portion of pasta and a large salad instead of the other way around. Another weight loss tip is to add more vegetables to the ratio of pasta when you make pasta, so you have less pasta and more vegetables. Remember, it's all about nutrient-density.
Vegan White Bean Chili
I love chili, although, I get sick of the same old tomato-sauce recipes. Instead, I’ve decided to make a vegan white bean chili recipe. Similar to a white chicken chili, vegan white bean chili skips the chicken and is filled with delicious vegetables.
