In order to have decadence without guilt, butternut squash is the perfect creamy sauce. In fact, roasted butternut squash, and a few other ingredients, create a savory “cheese” like sauce.
More often than not, I am struggling to find a quick diner when the day doesn’t quite go as planned. Like many people, I am on the go all the time, and although I plan well, sometimes, I need a quick go to meal that will please everyone.
Whenever I serve pasta, I always serve an enormous salad with an oil-free dressing first. First, I get all my nutrient dense veggies first. Then, I an enjoy the creamy pasta without much worry of eating too much. Because the sauce is made primarily of butternut squash and a few other ingredients, the broccoli is an additional green to add to the veggies for the family.
Secondly, I chose to roast the butternut squash, onion and a shallot together, to bring out the flavor in the sauce. Although the squash can be steamed, I think the richness of the squash shows through with roasting it first.
Another thing I like about this recipe, is you can make the sauce in advance. Then, the only step left is the noodles and broccoli, which can be cooked together, a little something I learned on the Food Network.
