    Spicy Sun Dried Tomato Bean Dip

    Although I try to avoid crackers and bread, as much as possible, I love dip. Spicy. And, an oil-free healthy dip is a bonus! How often can you find a guilt-free dip without oil or fat added? Spicy Sun-Dried Tomato Dip is one of my favorite skinny dipping dips. In fact, spicy sun-dried tomato bean dip only requires six simple ingredients. 

    Recently, I fell in love with carrot chips; carrots cut into rounded chips. Believe it or not, carrot chips have the perfect dip base. When the store is out of carrot chips, I cut my own, as well as cucumber slices, and other vegetables I like to dip.

    WHAT INGREDIENTS ARE NEEDED FOR SPICY SUN-DRIED TOMATO BEAN DIP? 

    • Great Northern Beans, or navy beans
    • Sun-dried tomatoes (dried not packed in oil)
    • Garlic
    • Sriracha (optional, but add if you like it spicy; if you like it mild leave it out)
    • Vegetable broth
    • Chickpea Crackers or vegetables for dipping

    Most people stay away from dips because they are generally high in fat. Diversely, spicy sun-dried tomato bean dip will knock your socks off. Despite being perfect for dipping vegetables, it is also a great sandwich spread inside a wrap sandwich as well.

    Because I used sun-dried tomatoes in a package versus the ones packed in oil, my di pis oil-free.

    When I caught my husband using his finger to get the last bit of dip from the bowl, I knew this was a keeper. Although he claimed he was doing the dishes, I caught him red-handed.

    So, if you are looking for a great dip for a party or a snack while watching your favorite game, give this one a try.

    Spicy Sun Dried Tomato Bean Dip

    Try some skinny dipping with this tasty spicy sun-dried tomato bean dip that will leave you begging for just a little more dipping.

    Ingredients
      

    • 15 ounces Great Northern Beans or navy beans
    • ¼ cup sun-dried tomatoes dried not in oil
    • 1 ½ cups boiling water to soak sun-dried tomatoes; then discard
    • 1 clove garlic minced
    • 1 Tablespoon Sriracha
    • 1 cup vegetable broth
    • Chickpea Crackers or vegetables for dipping

    Instructions
     

    • Place ¼ cup sun-dried tomatoes in a measuring cup and cover with boiling water. Let sit for 10 minutes.
    • Drain tomatoes (they will be softer and easier to blend) and discard the water
    • Drain beans
    • Add beans, sun-dried tomatoes, garlic, Sriracha, and vegetable broth to a food processor (I used my mini one), and blend until smooth.
    • Serve with sun-dried tomatoes on top for garnish
    • Serve with vegetables or crackers

    Notes

    • Can also be served hot
    • Bake at 325 for 10 minutes

      Is the 1.5 cups of water and the 1.5 cups of broth for soaking the sun dried tomatoes? It doesn't mention to add it anywhere in the recipe and adding it to the other ingredients would make it pretty soupy. Thank you Cheryl

        Hi Cheryl, the recipe was updated and apparently didn't transfer. It is fixed and has the missing parts of the directions. The 1 1/2 cups water is for softening the sun-dried tomatoes and then is discarded. The vegetable broth is used in blending the dip. I start with 1 cup of vegetable broth and you can add more if it is too thick. Thank you for letting me know. I appreciate it, and I hope you enjoy the dip.
