In order to make salad fun at my house, I often make a mini salad bar as part of dinner. Instead of choosing what goes in everyone's bowl, I let them choose. For example, caesar salad is one of my family's favorite salads, so I made it a priority to veganize it.
For this particular salad bar, I used Romaine Lettuce, Skinny Cashew Vegan Parmesan “Cheese”, cucumbers, red onions, oil-free croutons, capers, tomatoes, and my new homemade, oil-free caesar dressing.
When I create a salad bar, my family gathers around and eats way more salad. Then, I watch them go back for seconds. In fact, sometimes the salad is the only part of dinner without leftovers the next day. And, I don't know about you, but that's a win at my house. Also, if you do end up with extra cut cucumbers, or any ingredients, they tend to store better in individual containers.
Skinny Vegan Caesar Salad
Make your family a salad bar, and watch the salad disappear. Caesar Salad Bar is fun for the whole family.
Ingredients
SALAD
- 2 large heads Romaine Lettuce, cut or ripped into bite sized pieces
- 1 English cucumber, sliced thin
- 2 cups grape tomatoes, cut in half
- 1 red onion, cut in half and sliced thin
- 1/2 cup capers
Oil-Free Crispy Garlic Croutons
- 4 slices Dave's Multi-grain bread (or any bread of choice) FROZEN; gluten-free bread also works
- 1/4 cup aquafaba (chickpea fluid) or almond milk will work as well
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 3 teaspoons garlic salt
CAESAR DRESSING (MAKES 3/4-1 cup)
- 1/2 cup raw cashews, soaked overnight, drained
- 1/4 cup water + 2 Tablespoons
- 3 Tablespoon lemon juice
- 1/2 Tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1 small garlic clove (you can add another if you like it super potent)
- 1/2 Tablespoon vegan Worcestershire sauce (I use Wizard's gluten-free brand)
- 2 teaspoons capers
- 1/2 teaspoon fine grain sea salt and pepper, or to taste
Instructions
TO MAKE A SALAD BAR
- Separate all ingredients into separate bowls
- Make Oil-Free Crispy Garlic Croutons according to directions
- Serve dressing on the side
DRESSING
- Place all ingredients in a high speed blender
- Blend on high until smooth
- Place in container and chill until ready to serve
- Serve on the side for salad bar
