In order to make salad fun at my house, I often make a mini salad bar as part of dinner. Instead of choosing what goes in everyone’s bowl, I let them choose. For example, caesar salad is one of my family’s favorite salads, so I made it a priority to veganize it.
For this particular salad bar, I used Romaine Lettuce, Skinny Cashew Vegan Parmesan “Cheese”, cucumbers, red onions, oil-free croutons, capers, tomatoes, and my new homemade, oil-free caesar dressing.
When I create a salad bar, my family gathers around and eats way more salad. Then, I watch them go back for seconds. In fact, sometimes the salad is the only part of dinner without leftovers the next day. And, I don’t know about you, but that’s a win at my house. Also, if you do end up with extra cut cucumbers, or any ingredients, they tend to store better in individual containers.
