It's time to step out of the Taco Tuesday box and enjoy summer for a few more days. If you love watermelon, as much as I do, skip the regular salsa and make skinny watermelon salsa. Although I am an avid fan of all types of salsas, watermelon salsa has an incredible freshness to it.
Completely tomato-free, this salsa changes the whole taste of your tacos. Without any oil or salt, watermelon salsa will tempt your tastebuds. Not only does it rock the inside of your tacos, but you can also put it on gazpacho. In addition, you can serve it on the side as a salad, or can be served with chips as an appetizer.
So, if you are tired of your plain tomato salsa, give watermelon salsa a try. My family ate the whole bowl during Taco Tuesday. In order to jazz up your taco Tuesday, make watermelon salsa next week, and each your family smile.
Although you can use watermelon salsa for a variety of dishes, I served it with my Vegan Oil-Free Lentil Tacos and Simple Rosemary Infused Pickled Red Onions. Choose your taco fillings, and enjoy!
Skinny Watermelon Salsa
Jazz up your taco Tuesday with watermelon salsa, a fresh taste of summer before summer leaves us.
Ingredients
- 3 cups watermelon, cut into bite sized pieces
- 1/2 cup radishes, diced
- 1 English cucumber, diced
- 1 Jalapeño, seeds removed, and diced
- 1 clove garlic, minced
- 3 Tablespoons lime juice
- 1 cup cilantro, chopped
Instructions
- Place all ingredients in a bowl.
- Stir
- Refrigerate for an hour before serving
