- 1 cup Onion white or yellow
- 6 cloves garlic minced
- 15 ounce diced tomatoes
- 1 cup red bell pepper diced
- 1 Tablespoon smoked paprika
- ½ teaspoon saffron threads crushed
- 2 Tablespoons nutritional yeast
- 30 ounces butter beans drained and rinsed
- 1 cups vegetable broth
- 2 bay leaves
- 2 cups kale chopped
- Parsley as a garnish
In a large non-stick skillet, saute onions and garlic until onions are translucent.
Add diced red bell peppers, and cook a few minutes until they are softened.
Now, add the canned tomatoes, bay leaves, smoked paprika, nutritional yeast, saffron, and drained and rinsed butter beans.
Add 1 cup of vegetable broth and bring to a boil.
Add bay leaves.
Reduce heat and simmer, cover, and cook for 30 minutes.
Add chopped kale and stir into the beans until the kale wilts.
Remove from heat and pour into individual bowls.
Top with parsley if desired
Serve with crusty bread
