Coleslaw with Apples

This beautiful coleslaw with apples is a combination of savory and sweet. Made with kale and cabbage and dressed in a smokey maple dijon dressing, this apple slaw recipe is perfect on top of your favorite sandwich, as a side, or an entree salad.

Ingredients

COLESLAW

  • 2 cups napa cabbage chopped
  • 1 cup purple cabbage chopped
  • 2 Honey Crisp Apples soaked in 2 Tablespoons lemon juice to prevent browning
  • 4 cups kale shredded
  • 1 bunch green onions sliced thin

DRESSING

  • ½ cup raw cashew soaked overnight and drained
  • ¼ cup pure Maple Syrup
  • ¼ cup Apple Cider Vinegar
  • 3 Tablespoons Dijon Mustard
  • 1 teaspoon liquid smoke
  • ¼ cup water

Instructions

SALAD

  • Cut and combine all ingredients in a large bowl, except the apples.
  • Cut the apples into bite-sized pieces and toss in lemon juice; allow to sit for a few minutes for the apples to absorb the lemon juice.

DRESSING

  • Combine all ingredients in a blender
  • Blend until smooth

COMBINE

  • Pour dressing over salad and toss
  • Cover and refrigerate for at least 30 minutes before serving

Notes

White beans may be replaced in the dressing for cashews.
