  • Saute red onion, red chili pepper, and garlic until onion is translucent.
  • Add spices, stir, and cook for a few minutes.
  • Add tomatoes and pinto beans; cook until heated through
  • Add lite coconut milk and stir together
  • Bring to a boil; then reduce heat to low and cook for 10 minutes.
  • Remove the cinnamon stick before serving.
  • Serve as a side dish or an entree.
