Tofu Skewers

Tofu Skewers are layered with the flavors of charred red onion, mushrooms, and roasted red peppers in a tofu steak marinade. So, next time you are grillin' and chillin', grill up some tofu skewers.

Ingredients

  • 14 ounces sprouted tofu or extra-firm tofu, pressed and dried, and cut into 1 inch cubes
  • 16 ounces mushrooms cleaned and stems removed
  • 1 large red onion cut into quarters, then cut into equal size pieces similar to the tofu cubes
  • 2 red bell pepper cut into equal size pieces similar to the tofu cubes

Tofu Marinade

  • cup soy sauce or Tamari
  • cup fresh lemon juice
  • ¼ cup vegan Worcestershire sauce
  • 2 cloves garlic minced
  • 1 ½ Tablespoon garlic powder
  • 3 Tablespoons basil
  • 1 ½ Tablespoons parsley
  • 1 teaspoon black pepper
  • ¼ teaspoon Sriracha option, but suggested

Instructions

TOFU MARINADE

  • Whisk all the ingredients together and set aside.
  • If using extra-firm tofu, instead of sprouted tofu, Drain and press tofu according to these directions: How to Press Tofu.
  • Cut tofu into 1-inch cubes
  • Place tofu in a refrigerator safe container with a top and pour marinade over the top.
  • Marinate overnight or at least a few hours, moving the container around, so all the tofu absorbs the marinade's flavors.

PREPARING AND GRILLING TOFU SKEWERS

  • Preheat the grill to 400 degrees or medium
  • Place tofu and vegetables on skewers, rotating tofu with alternative vegetables.
  • Place tofu skewers directly on the grill or on a grill mat.
  • Cook for about 8 minutes on each side, rotating every 4 minutes.
  • Remove from the grill and place back in the marinade until ready to use.  
  • Then, I always remove the tofu and vegetables in a large family-sized bowl and pour the leftover marinade over the top. 

Notes

Sometimes I serve with a large family-sized bowl of rice, or this time I made my Asparagus Salad and my Vegan Potato Salad. Let's say today's BBQ with the kids went well because there wasn't a leftover in the house.
