Vegan Chocolate Peanut Butter Balls

Enjoy a chocolate peanut butter ball dessert with natural peanut butter, flax seeds, and a little vegan chocolate. One bite sized treat is all you need.

Ingredients

  • 1 cup natural creamy peanut butter or creamy peanut butter of choice
  • 4 Tablespoons ground flax seed meal
  • 1 cup confectioners sugar
  • 10 ounces vegan chocolate chips

Instructions

PEANUT BUTTER BALLS

  • In a medium sized bowl combine peanut butter and flax seed meal; stir to combine
  • Add confectioner's sugar
  • Stir to combine until all confectioner sugar is mixed with peanut butter.
  • Prepare a baking sheet with wax paper
  • Using your hands, take about a Tablespoon of peanut butter mixture, and roll into individual balls.
  • Lay each ball on the wax paper
  • Refrigerate for at least 1 hour to harden BEFORE dipping

CHOCOLATE

  • In a microwave safe bowl, microwave chocolate chips at
    level 5 
    (50% power) in microwave on 1 minute intervals, stirring chocolate in between until completely melted (varies with microwave ovens)
  • Using a large baking sheet plan, cover with wax paper
  • Dip each peanut butter ball in chocolate and lay on the pan with wax paper (I use a spoon)
  • Put back into the refrigerator until you are ready to serve.
  • I like to put them in mini muffin or candy wrappers, so they look a little more fancy.

Notes

Remember when melting chocolate to stop heating it before everything looks melted. The residual heat will melt the remaining lumps as you stir.
