  • ½ teaspoon paprika
  • ½ teaspoon pepper
  • ¼ cayenne pepper

Vegan Coleslaw

OTHER INGREDIENTS

  • 4 tortillas lavash wraps, or wrap of choice
  • 1 large tomato sliced thin
  • 4 cups raw baby spinach

Instructions

Press Tofu

  • Press tofu using a tofu press
  • Cut the tofu into 4 identical pieces

Homemade BBQ Sauce

  • Sauté the onions and garlic in a medium-sized saucepan until translucent.
  • Combine all other ingredients.
  • Bring to a boil.
  • Reduce to simmer.
  • Cook 20 minutes on simmer until sauce thickens.

Marinating Tofu

  • Place ½ cup BBQ sauce in the base of a container.
  • Add two slabs of tofu.
  • Add a little more BBQ sauce and two more slabs of tofu.
  • Then, top with the remaining BBQ sauce.

Cooking Methods

    Grilling

    • Preheat the grill to low
    • Place a grill mat on the grill (you can also use a grill pan, or if you are careful, you can place the tofu directly on the grill.
    • Cook for about 8 minutes on each side
    • Remove from the grill and place back in the marinade until ready to use.
    • Then, cut it into strips or cubes

    Baking

    • Simply follow the same pressing and marinating process.
    • Then, preheat the oven to 400 degrees.
    • Place cut or uncut tofu on a silicone baking mat  or parchment paper
    • Cook for 15 minutes
    • Remove from oven and flip tofu over; cook for an additional 15 minutes.

    Air Frying

    • Follow the same pressing and marinating process.
    • Set air fryer temperature at 375 degrees
    • Cook 10-15 minutes, shaking the basket a couple of times through the cooking process.

    BBQ Tofu Sandwich

    • Place a tortilla or lavash wrap on the solid surface.
    • Add a generous portion of spinach.
    • Add ½ cup of the coleslaw.
    • Add two slices of tomato.
    • Then, add strips of BBQ tofu.
    • Fold the top and bottom, and wrap tightly like a burrito.
    • Preheat a non-stick pan to medium-low
    • Place sandwiches in the pan's base and allow to cook about 4 minutes on each side, checking to make sure the bread doesn't burn.
    • Continue to turn until all sides are toasted.
    • Remove sandwiches from the pan and slice.
    • Serve with extra BBQ sauce

    Notes

    • For best results, marinate tofu overnight. Or, if meal prepping, marinate and freeze tofu. Then, thaw completely before cooking.
    • Air frying is the quickest way to cook tofu. However, I prefer to grill tofu, especially in the summer months.
    • Eat the sandwich cold instead of cooking it and browning it in a skillet.
    • Add other vegetables inside the BBQ tofu sandwich.
    • Try pineapple coleslaw for a sweet and barbeque combination.
    • Sandwiches grill well in a pan without any oil.
