Salad Ingredients
- 2 heads Romaine Lettuce cut or ripped into bite-sized pieces
- 1 English cucumber sliced thin
- 2 cups grape tomatoes cut in half
- 1 red onion cut in half, and sliced thin
- ½ cup capers
- vegan parmesan cheese optional

Caesar Dressing (Makes ¾-1 cup)

Serve to dress on the side

Place all ingredients in a high-speed blender.
Blend on high until smooth.
Place the dressing into a container and chill until ready to serve.
Serve on the side for a salad bar.
- Soak the raw cashews overnight if you don't have a quality, high-speed blender.
- Wait to add the croutons or dress the salad until serving time.
- Make the Caesar dressing ahead of time so it thickens and chills in the refrigerator.
- The dressing stays fresh for 5 days in the refrigerator.
- Keep the croutons in a dry space, covered. Please don't refrigerate the croutons.
- Prepare individual salads or make a salad bar for people to choose their toppings.
