BBQ Coleslaw

BBQ coleslaw recipe is full of kale, cabbage, carrots, red onions and red bell pepper, dressed in a creamy light BBQ dressing with a lightly smoky and sweet flavor. Put BBQ coleslaw on a burger, or serve as a side dish or entree.

Ingredients

  • 10 ounces coleslaw mix I chose kale, white cabbage and red cabbage mix
  • ¾ cup shredded carrots
  • ½ red onion sliced in thin strips
  • ½ red bell pepper cut into thin strips

BBQ Coleslaw Dressing

  • ½ cup Vegan Cashew Mayo
  • 2 ½ Tablespoons yellow mustard
  • 2 ½ Tablespoons Maple Syrup
  • 2 Tablespoons BBQ sauce I used homemade healthy BBQ sauce

Instructions

  • Place coleslaw vegetables into a large bowl.
  • Add red onions, red bell pepper and shredded carrots.

BBQ COLESLAW DRESSING

  • Combine vegan cashew mayo (or mayo of choice), mustard, maple syrup and BBQ sauce.
  • Whisk ingredients until combined.
  • Pour the dressing over the coleslaw ingredients.
  • Toss to cover.
  • Cover and place in the refrigerator until ready to serve.
  • BBQ coleslaw can be made day ahead of time .

Notes

Even though tonight I plan to serve BBQ coleslaw as a side dish, this recipe is fabulous for other sandwiches. For instance, I love it on top of a tofu burger. Or, serve BBQ coleslaw with your favorite BBQ dishes.
