    BBQ Coleslaw

    BBQ Coleslaw

    I love coleslaw because of its superfood health benefits. And what I enjoy most about coleslaw recipes is the varieties of coleslaw varieties for different salad recipes. BBQ coleslaw, for instance, tastes slightly smoky yet sweet and creamy. My BBQ coleslaw recipe, for example, is perfect as a burger topping, a side salad, or an entree salad with your favorite vegan protein. 

    Today, however, I plan to serve BBQ coleslaw as a side dish for our tofu burgers. But I'm sure my kids will pile it on top of their burgers as well. 

    For this coleslaw, I chose a kale cabbage mix. Then, I added red bell peppers, shredded carrots, and red onions. Because I included kale, I dressed the BBQ coleslaw earlier the day, softening the kale and cabbage. 

    WHAT IS IN THE BBQ COLESLAW DRESSING?

    First, you need to use your favorite vegan mayo. Since I don't eat oil or store-bought mayo, I make my own Vegan Cashew Mayo. The rest of the ingredients, more than likely, are in your pantry and refrigerator. 

    • Yellow Mustard
    • Maple Syrup 
    • BBQ sauce ( I used my Healthy BBQ Sauce recipe without oil)

    Then, whisk the 4 ingredients together and pour over the coleslaw vegetables. As I said before, dressing the BBQ coleslaw in advance actually helps enhance the flavors and soften the kale.

    SERVINGS BBQ COLESLAW RECIPE

    Even though tonight I plan to serve BBQ coleslaw as a side dish, this recipe is fabulous for other sandwiches. For instance, I love it on top of a tofu burger. Or, serve BBQ coleslaw with your favorite BBQ dishes.

    For example, switch out the Vegan Harvest Apple Maple Dijon Slaw with  BBQ coleslaw on this BBQ Tempeh sandwich.

    Another favorite BBQ recipe for this coleslaw is Pulled Pork Sweet Potato Sandwich, and swap out the Vegan Harvest Apple Maple Dijon Slaw with BBQ coleslaw.

    BBQ coleslaw recipe is full of kale, cabbage, carrots, red onions and red bell pepper, dressed in a creamy light BBQ dressing with a lightly smoky and sweet flavor. Put BBQ coleslaw on a burger, or serve as a side dish or entree.

    Equipment

    • 365 by Whole Foods Market, Organic Pure 100% Grade A Maple Syrup, Dark Color Robust Taste, 32 Fl Oz

    Ingredients
      

    • 10 ounces coleslaw mix I chose kale, white cabbage and red cabbage mix
    • ¾ cup shredded carrots
    • ½ red onion sliced in thin strips
    • ½ red bell pepper cut into thin strips

    BBQ Coleslaw Dressing

    • ½ cup Vegan Cashew Mayo
    • 2 ½ Tablespoons yellow mustard
    • 2 ½ Tablespoons Maple Syrup
    • 2 Tablespoons BBQ sauce I used homemade healthy BBQ sauce

    Instructions
     

    • Place coleslaw vegetables into a large bowl.
    • Add red onions, red bell pepper and shredded carrots.

    BBQ COLESLAW DRESSING

    • Combine vegan cashew mayo (or mayo of choice), mustard, maple syrup and BBQ sauce.
    • Whisk ingredients until combined.
    • Pour the dressing over the coleslaw ingredients.
    • Toss to cover.
    • Cover and place in the refrigerator until ready to serve.
    • BBQ coleslaw can be made day ahead of time .
