Yesterday, the kids came over for a Mexican themed dinner. Although I planned to serve Vegan Enchiladas as the main entree, I made some appetizers since the kids were at our house all day enjoying the pool. Obviously, I made my Pico de Gallo and Chili Cheese; Dip, but I wanted another appetizer to keep everyone full and happy. So, I made a new Mexican meatball recipe using my Vegan Lentil Meatballs recipe as the base. Then, I added a few simple ingredients to the crockpot, and Mexican meatballs were a hit!
When the kids come over to visit, I like to cook in advance so I can spend time with them instead of cook the entire time they are here. For that reason, I chose to make Vegan Enchiladas and all the other goodies ahead of time. As I said in many blog posts, I love my crockpot, because I can throw all the ingredients in the crockpot in the morning and walk away.
Since I make my Vegan Lentil Meatballs in advance and freeze them, I can use them for a variety of recipes. For instance, I use my lentil meatballs for:

HOW TO MAKE OIL-FREE VEGAN LENTIL MEATBALLS FOR MEXICAN MEATBALLS
In order to make the lentil meatballs, you need the following ingredients:
- Brown Lentils
- Organic Vegetable Broth
- Shallot
- Garlic
- Basil
- Italian Parsley
- Muir Glen Organic Tomato Paste
- Italian Panko Bread Crumbs
- Salt
- Pepper
- Flax egg
Again, I like to make a batch of vegan lentil meatballs and freeze them, so I can add them to crockpot frozen.

Sometimes, we all need shortcuts if we don't have time to make homemade lentil meatballs. For that reason, I suggest these meatless meatball store-bought options:

📖 Recipe
Mexican Meatballs
Ingredients
- 25-30 lentil meatballs or frozen meat balls of choice
- 15 ounces fire-roasted tomatoes
- 10 ounces Rotel tomatoes with green chilis
- 1 cup Skinny Nacho Cheese Sauce or 1 cup of your favorite vegan cheese sauce
- 2 cups vegetable broth
- 1 packet vegan taco seasoning mix
Instructions
- Place frozen meatless meatballs into a crockpot base
- Add both cans of tomatoes and 1 cup vegan nacho cheese sauce
- Gently stir, combining the ingredients
- Add 2 cups vegetables broth
- Cover and cook for 6 hours on low or 4 hours on high
- Do not stir until right before serving.
- Serve with cilantro as a garnish
