    We love vegan taco salad; however, I am trying to add more beans and other legumes to our meals, so today, I made a black bean taco salad recipe with a bunch of healthy veggies and even more beans!

    The Benefits of Eating Beans

    Plant-based proteins such as beans and other legumes are high in minerals and dietary fiber without the saturated fat and cholesterol in animal proteins

    Beans, lentils, and split peas are rich in fiber, resistant starch, and plant protein and are a low-glycemic carbohydrate source. The health benefits of these legumes sometimes get overlooked, but adding beans to your diet promotes weight loss, cardiovascular health, and insulin sensitivity. 

    Black Bean Taco Salad Ingredients

    Bean taco salad ingredients in bowls: black beans, white beans, pinto beans, cilantro, limes, taco seasoning, red onions, and red bell peppers.
    • Black Beans: Black beans contain about 15 grams of protein, which can help you feel full longer. 
    • White Beans: A cup of cooked great northern beans contains 12.4 grams of fiber, about 50% of the daily value. Fiber helps regulate digestion, blood sugar levels, and cholesterol levels
    • Pinto Beans: Pinto beans are cholesterol-free and low in fat, which can help improve heart health. They also contain magnesium and potassium, which can help lower blood pressure.
    • Red Onions: Red onions are sweetest in the summer and early fall, and their sharpness increases through the winter
    • Red Bell Pepper: Red bell peppers are sweet and mildly earthy and are the loveliest of the bell pepper varieties.
    • Cilantro: Fresh cilantro has a spicy, peppery, and lemony taste.
    • Limes: I prefer using fresh lime juice.
    • Taco Seasoning: Vegan taco seasoning packets are a quick and easy way to make a black bean taco salad in a few minutes
    • Jalapeños: Make sure to deseed the jalapeños, or add a few seeds if you like it hot.
    • Tomatoes: Grape tomatoes cut into bite-sized pieces add acidity and flavor,

    Black Bean Taco Salad Ingredient Substitutions

    • Choose any combination of beans or use all black beans. You choose your favorites.
    • White onions or green onions are a fabulous substitution for red onions.
    • Not a cilantro fan? No worries; try Mexican oregano or parsley. I also like basil for a change.
    • Green peppers or multi-colored baby bell peppers are outstanding in addition to all red bell peppers.
    • You can use homemade taco seasoning.
    • If you aren't a jalapeno fan, try mild peppers or skip them altogether.

    How to Make Vegan Bean Taco Salad

    This black bean taco salad recipe is easy and peasy!

    • Drain and rinse the beans.
    • Use any variety of beans; all black beans, or mix it up like I did.
    • I suggest a vegetable chopper to make this vegan taco salad quick and easy.
    • Put all the rinsed beans, chopped veggies, cilantro, limes and taco seasoning in a large bowl.
    • Toss the ingredients together.
    • Cover and place in the refrigerator to allow the flavors to develop.

    Serving Suggestions

    • Eat the black bean taco salad in a bowl as a main course or side dish.
    • Serve on to of your favorite greens.
    • Cut up baby bell peppers and use them as chips to scoop up this delicious vegan bean taco dip.
    • Fill a baked sweet potato or a plain baked potato.

    • 1 15 ounce can black beans
    • 1 15 ounce can white Northern beans
    • 1 15 ounce can pinto beans
    • 1 small red onion diced
    • 1-2 jalapeños deseeded and diced
    • 1 red bell pepper diced
