We love vegan taco salad; however, I am trying to add more beans and other legumes to our meals, so today, I made a black bean taco salad recipe with a bunch of healthy veggies and even more beans!

- Drain and rinse the beans.
- Use any variety of beans; all black beans, or mix it up like I did.
- I suggest a vegetable chopper to make this vegan taco salad quick and easy.
- Put all the rinsed beans, chopped veggies, cilantro, limes and taco seasoning in a large bowl.
- Toss the ingredients together.
- Cover and place in the refrigerator to allow the flavors to develop.
Serving Suggestions
- Eat the black bean taco salad in a bowl as a main course or side dish.
- Serve on to of your favorite greens.
- Cut up baby bell peppers and use them as chips to scoop up this delicious vegan bean taco dip.
