Dressing Ingredients
- Red Wine Vinegar: Red wine vinegar is sharp and tangy; it has smokier notes and a fuller body than you'll find in white vinegar. It also lends a rosy hue to foods.
- Water: Water acts as an emulsifier in the absence of oil.
- Italian Seasoning: The blend of herbs present in Italian seasoning usually consists of basil, oregano, rosemary, thyme, and marjoram, with other herbs and spices sometimes appearing.
- Garlic: I prefer using fresh garlic cloves for the best flavor.
- Lemon Juice: I prefer fresh lemon juice for dressings, sauces, and dips.
- Hummus: I chose oil-free regular, flavor hummus.
Dressing Ingredient Substitutions
- Balsamic vinegar is similar to red wine vinegar, with a bolder flavor.
- Herbs de Provence is similar to Italian seasoning.
- Use ⅛ teaspoon of garlic powder in place of each clove.
- If you don't have fresh lemon juice, try bottled lemon juice.
- Choose any hummus or flavored hummus for a unique flavor.

Where do you find oil free hummus?
Thanks
Kathy Carmichael
Hi Christine, I like three different brands: Engine, Cava, and Oasis; all make oil-free hummus, or you could make your own. These brands are available at Kroger (Frys), Sprouts, and Whole Foods. I hope this helps.

I would like to make this recipe. I do freeze lemon and lime juice but in 1 T. amounts. How much would you say the juice of 1 lemon is?
Kathy Carmichael
Hi Laurie, 1 medium lemon yields 3 Tablespoons of lemon juice.
