And nothing tastes better on cauliflower tacos than a delicious vegan avocado-cilantro cream. So, this Tuesday, live on the adventurous side and try this cauliflower taco recipe.

When I think about the perfect "meat" replacement for tacos, cauliflower comes to mind. Similar to broccoli, cauliflower absorbs flavors like a sponge. Once roasted, cauliflower soaks up any marinade or seasoning without using any oil.
First, homemade taco seasoning tastes best, but my favorite vegan taco seasoning version is Neat Whole Food Plant-Based Mexican Mix.
Homemade Taco Seasoning Ingredients
- Chili Powder
- Red Pepper Flakes
- Cayenne Pepper
- Oregano
- Smoked Paprika
- Cumin
- Garlic Powder
- Onion Powder
- Sea Salt
- Freshly Ground Black Pepper
Roasting Cauliflower
One of the best ways to make the seasoning stick to vegetables is to get it wet by rinsing it before cooking.
For instance, I cut the cauliflower into florets, place it in a colander and rinse thoroughly.
As a result, the water provides a way for the seasoning to stick to the cauliflower without oil.
- Once rinsed, I lay the cauliflower flat or on a baking sheet with a silicone baking mat or parchment paper and sprinkle the taco seasoning generously over the wet cauliflower.
- Another way to get the cauliflower to stick is to place the wet cauliflower into a bowl and toss the cauliflower in the seasoning.
- Roast in a 400-degree oven for 35 minutes
- Or, for an air-fry option, cook in a single layer at 370 degrees for 15 minutes.
Avocado Cilantro Cream
To make the secret sauce for the cauliflower taco recipe with avocado-cilantro cream, all you need is an avocado, cilantro, limes, and some seasoning. That's it!

As a side note, this makes great salad dressing as well!

How to Warm Corn Tortillas
- In the Microwave, put five or fewer tortillas on a microwavable plate and cover them with a damp paper towel.
- Microwave in 30-second bursts until they are warmed through. Repeat in batches of five tortillas until all your tortillas are warm.
- In the oven, wrap a stack of five or fewer tortillas in a packet of aluminum foil and put it in a pre-heated 350° oven for 15-20 minutes until heated.
- You can do multiple packets of five tortillas, each simultaneously.

Easy Roasted Cauliflower Tacos
Ingredients
Cauliflower
- 1 head organic cauliflower; cut into bite-sized florets
- 4 Tablespoons chili powder
- 1 teaspoon red pepper flakes
- ¼ teaspoon cayenne pepper
- 1 teaspoon oregano
- 2 teaspoons smoked paprika
- 2 Tablespoons ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon sea salt
- 1 Tablespoon freshly ground black pepper
Avocado Cilantro Cream
- 1 large avocado
- ½ cup cilantro
- ¼ cup lime juice
- 2 cloves garlic
- 1 teaspoon garlic powder
- 1 teaspoon Sriracha Optional
Toppings and Garnish (optional)
- ½ cup pickled red onions
- ¼ cup vegan sour cream
- ½ cup Chopped tomatoes
- ½ cup chopped raw onion
- 1 cup micro-greens
Instructions
Cauliflower
- Preheat oven to 425 degrees
- Place cauliflower florets on a baking sheet lined with parchment paper or a silicone baking mat
- Generously sprinkle taco seasoning on cauliflower florets
- Roast for 25 minutes
Avocado Cilantro Cream
- Combine all ingredients in a high-speed blender.
- Place in an airtight container and refrigerate until ready to use.
Corn Tortillas (warm)
- In the Microwave, put five or fewer tortillas on a microwavable plate and cover them with a damp paper towel.
- Microwave in 30-second bursts until they are warmed through. Repeat in batches of five tortillas until all your tortillas are warm.
- In the oven, wrap a stack of five or fewer tortillas in a packet of aluminum foil and put it in a pre-heated 350° oven for 15-20 minutes, until heated through.

Serving
- Place a warmed tortilla on a plated roasted cauliflower.
