For instance, beets contain essential nutrients and are a great source of fiber, folate(vitamin B9), manganese, potassium, iron, and vitamin C. In addition, beetroots and beetroot juice have been associated with numerous health benefits, such as improved blood flow, lower blood pressure, and increased exercise performance."
Combined with a few other whole foods, healthy beet dip tastes excellent and is also healthy! So, let's make a creamy beet dip for your next party!
Beet Dip Ingredients
First, you need a high-speed blender or a food processor to make a great dip in a few minutes. I love my Nutribullet but use my Kitchen-Aid Food Processor just as often. So for this beet dip recipe, I used my Nutribullet.
- Cooked Beets: I used Trader Joe's cooked beets.
- Raw Cashews: The raw cashews provide the creaminess. However, for nut-free options, see the substitutions below.
- Fresh Lemon Juice: I prefer fresh lemon juice whenever possible.
- Jalapeno: The jalapeno provides a hint of spice to the beet dip recipe.
- Garlic: Garlic has a unique, savory flavor that borders on spicy when raw
- Ginger: Ginger it is best to consume ginger in its raw form. Besides its content of gingerols, raw ginger is rich in vitamins and minerals, such as vitamin C, potassium, magnesium, and calcium, which are essential for maintaining normal body function.
- Cumin: Rich and hearty, earthy and warm, with an edge of citrus. Cumin adds instant depth to any dish.
- Salt: A little salt brings out the flavors of the rest of the ingredients in the dip.
- Pepper: I prefer fresh ground pepper whenever possible.
- Water: The water thins the beet dip to the perfect consistency.
- Mint: The mint is an optional garnish.
Beet Dip Substitutions
- Roast fresh beets or used canned, drained beets.
- Swap out the cashews for sunflower seeds for a nut-free alternative.
- Or, use silken tofu or plant-based plain yogurt.
- If fresh lemon juice isn't available, use bottled. Or swap for lime juice.
- Serrano peppers or Fresno chili peppers are excellent substitutes for jalapenos.
- One clove of garlic equals about ⅛th of a teaspoon of garlic powder.
- For every ¼ teaspoon of ground ginger, use 1 tablespoon of fresh-grated ginger in recipes.
- Ground coriander is an excellent substitute for cumin.
How to Make Beet Dip
- Place all ingredients in a high-speed blender or food processor.
- Blend until smooth
- Refrigerate until ready to serve

- The best way to cook beets is to roast them or bake them in the oven. It may not be the easiest, fastest way of cooking beets, but if you roast them correctly, you preserve maximum flavor, color, vitamins, and nutrients. Roasted or baked beets taste wonderful, both warm and cold.
- To boil beets, trim off the remaining stem and taproot from the cleaned beets. Place the beets in a large saucepan and cover them with water. 2. Bring to a boil, then reduce heat and simmer until fork-tender, 25 to 35 minutes for medium beets or 45 minutes to 1 hour for large beets.
- When working with jalapenos, or any hot peppers, be sure to wear gloves when removing the seeds and to cut the peppers.

Ingredients

- 1 jalapeño seeds, and veins removed
- 1 clove garlic
