Since transitioning to a plant-based diet, my love for chips, fries, and any carbs, for that matter, still exists. But, I quickly learned how to enjoy my favorite foods without using oil. And one of my favorite snacks is this sweet potato chips recipe.

Before transitioning to this way of life, however, I couldn't fathom how I could still eat potato chips or french fries without using oil. Then, I discovered the air fryer and how to bake without oil. And I eat sweet potato chips, french fries, and many other favorite foods, and my skinny jeans still fit.
When I first started cooking without oil, I went through boxes of parchment paper and discovered silicone baking mats. As I progressed in my cooking, I fell in love with my crisper pan. Then, I discovered the beauty of owning an air fryer.
Types of Sweet Potatoes
Although there are 4,000 different types of sweet potatoes, five main sweet potato varieties have different functions:
- Purple Stokes: slow bake, mash, curries, soups
- Garnet: Roasting, baking, stuffing, mashing, casseroles, soups, pureeing, pies
- Hannah: Roasting, baking, mashing, putting in stews and soups, fries
- Japanese: Roasting, stuffing, steaming, fries, soups, stews
- Jewel: Boiling, baking, casseroles, sweet potato pie
How to Choose and Store Sweet Potatoes
- First, choose sweet potatoes with tight, unwrinkled skins without bruises or blemishes. Bigger, however, is not always better; larger sweet potatoes are starchier. So, look for small- to medium-sized sweet potatoes.
- Unfortunately, sweet potatoes generally do not store well; once they spoil, they rot quickly.
- Even if you think you can cut away the spoiled parts of a sweet potato, it negatively affects the taste of the entire potato.
How to Cut Homemade Chips
- First, cut the sweet potatoes into thin slices using a Mandoline with a ¼ inch blade. Of course, you can make the sweet potato slices thicker, but then you must adjust the cooking time.
- Once the sweet potatoes are cut, place them in a container full of water until it's time to cook the sweet potato chips.
- Since I don't cook with oil, the water-soaked potatoes are wet, so the seasoning sticks.
- Before cooking the chips, drain the water from the sweet potato slices, place the damp potatoes in a bowl, and toss with desired seasonings.
Recipe Ingredients
- Japanese Sweet Potato: Jewel sweet potatoes have orange skin and orange flesh.
- Jewel Sweet Potato: Japanese yams have red and white flesh.
- Garlic Powder: Garlic powder is rich and has a deep flavor.
- Cajun Seasoning: I like Slap Ya Mama Cajun Seasoning
- Sea Salt: Sea salt helps bring out the natural flavors.
Other Seasoning Suggestions
- Lime juice, garlic, and chili powder
- Rosemary, salt, and lemon juice
- Dill and lemon juice
- Malt vinegar and salt
- Lemon pepper
- Vegan Parmesan Cheese
Cooking Options
Air Fryer
- Preheat the air fryer to 400 degrees.
- Place the seasoned potato slices in the base of the air fryer.
- Do not overcrowd.
- It is best to air fry in a single layer in batches.
- Cook for 15 minutes, flipping the chips after 7 minutes.
- Then, place cooked sweet potatoes on a baking sheet and transfer them to a 300-degree oven to keep warm while batch-cooking the other chips.
Oven
- Preheat the oven to 400 degrees.
- Place a single layer of the seasoned sweet potato slices on a baking sheet covered in parchment paper or a silicone baking mat.
- Or, use a crisper pan like an air fryer in the oven.
- Place the pan on the center rack for 30 minutes.
- If using a baking sheet with parchment paper or a silicone baking mat, flip potatoes after 15 minutes.

Ingredients
- 1 Jewel Sweet Potato skin on, sliced thin
- 1 Japanese Yam skin on, sliced thin
- 2 teaspoons Garlic powder
- 1 teaspoon Cajun Seasoning
- 1 teaspoon sea salt
Instructions
Preparing the Potatoes
- Wash the potatoes using a brush, removing any excess dirt and debris.
- Using a mandoline, slice the potatoes about ⅛ of an inch.
- Place the potato slices in a bowl of cold water for 30 minutes.
- Drain the potatoes, but leave them wet.
- Place the potato slices into a bowl and toss with seasoning of choice.
Air Fryer
- Preheat the air fryer to 400 degrees.
- Add a single layer of seasoned sweet potato chips to the base of the air-fryer pan.
- Cook for 15 minutes, flipping the potatoes over after 7 minutes.
- Then, place cooked sweet potatoes on a baking sheet and transfer to a 300-degree oven to keep warm.
