Although I have made a lot of different types of vegan bacon, vegan coconut bacon is my all-time favorite. Not only is vegan coconut bacon easy to make, but the taste and texture are also clearly the closest taste to the real thing according to my family.
Again, let me stress how simple it is. With four ingredients and 20 minutes, you have the perfect topping for potatoes, pizza, sandwiches, salads, and mac and cheese.
WHAT INGREDIENTS ARE NEEDED FOR VEGAN COCONUT BACON?
First, you need to find the core ingredient, unsweetened coconut chips. If you have a Trader Joes in your area, or any Kroger Store (Frys on the west coast). Often, I order my coconut chips online, because sometimes I can only locate flakes, which do not work as well for this recipe.

- Unsweetened coconut chips
- Maple Syrup
- Tamari or Soy Sauce
- Liquid Smoke
Not only is vegan coconut bacon easy to make, but it also keeps fresh for 7 days in the refrigerator and can be reheated in the microwave.
WHAT DOES VEGAN COCONUT BACON GO WELL WITH?

For instance, vegan coconut bacon is the perfect bacon for a thick and delicious vegan BLT sandwich.
Another great way to use coconut bacon is inside a chickpea omelette.

- Burger topping
- Veggie Tofu Scramble
- Twice Baked Potatoes
- Vegan Potato Soup
- Smashed Red Potato Recipe

- Potato Leek Soup
- On top of a salad or soup
- Inside a wrap with your favorite sandwich spread
- Mixed in air-popped vegan popcorn

Vegan Coconut Bacon
Ingredients
- 1 cup unsweetened coconut chips
- 3 Tablespoons Maple Syrup
- 3 Tablespoons Tamari or Soy Sauce
- 2 teaspoons Liquid Smoke
Instructions
30 MINUTES PRIOR TO COOKING
- In an airtight container, add coconut and all other ingredients
- Put the top on the container
- Shake
- Place in refrigerator for a minimum of 10 minutes, ideally 30 minutes, or overnight if planning ahead
- Preheat oven to 350.
- On a cookie sheet, cover with parchment paper
- Remove coconut mixture from the refrigerator
- Give it one last shake, and using the top drain any excess fluid
- Place a single layer of marinated coconut on the cookie sheet
- Use a spatula to spread a single layer, attempting to reduce a thick layer
- Place in 350 degree oven for 10 minutes
- Remove from oven; using a spatula, flip and move bacon around pan, still maintaining a single layer
- Cook another ten minutes
- Remove from oven and let cook completely.
- Transfer to an airtight container

Hi Ann, yes. Flip it over and shake the pan so it's a single layer. You need to watch it though; it cooks fast.

I just tried this too. First 10 minutes was ok (slightly burnt in a few areas around edges); however the second 10 minutes was a disaster for me (especially because I walked away) after 9 minutes I noticed a burning smell…assuming it was liquid smoke; but no about 99% was burnt. Granted the coconut chips I had were somewhat crushed but still I had maybe 8 good size chipped coconut pieces. That was a bummer though. Not so sure that the second 10 minutes is necessary. Kathy your thoughts?

Rhonda, I think you misread the directions, or I wasn't clear. The first 10 minutes is for marinating the ingredients together (I prefer overnight, but 10 minutes minimum), then it cooks for 10 minutes.

I tried this, but by the time my coconut had been in the oven for less than 10 minutes on the first side, it was burnt except some in the middle! I still hold out hope that next time will go better. I couldn't find chips and used flakes, which were a little smaller, but they clumped together a bit.

I struggled to find chips. So i will attempt with whole toated flakes.
Maybe just spray the marinade over it and see..
