    Almond Butter Dressing Recipe

    Whenever I make a salad, I first think about the dressing. Since adopting a plant-based diet, I'm somewhat of a mad scientist in the kitchen. My goal, of course, is to create tasty oil-free dressings, like my almond butter dressing. Regardless of the healthy ingredients in salads, eating a dressing high in fat can ruin attempting to eating healthily. My almond butter dressing recipe is delicious, oil-free, and can also be used as a dip or stir fry sauce. 

    PEANUT BUTTER VS ALMOND BUTTER? WHAT'S THE STORY?

    While both almond butter and peanut butter are high in monounsaturated fats, almond butter has slightly less saturated fat than peanut butter (and it’s lower in sodium). In other words, almond butter is actually more healthy than eating peanut butter.

    • Iron and fiber are high
    • Reduces heart disease 
    • Almond butter has 300 fewer calories than peanut butter per cup
    • Healthy protein

    Even though many people avoid nuts because they are high in fat, almond butter dressing only has ¼ cup of almond butter in the recipe. 

    WHAT INGREDIENTS ARE NEEDED TO MAKE CREAMY ALMOND BUTTER DRESSING?

    • ¼ cup almond butter
    • ¼ cup freshly squeezed lime juice
    • 1 Tablespoon soy sauce or Tamari
    • 1 Tablespoon minced fresh ginger
    • 1 Tablespoon white or yellow miso
    • 1 garlic clove minced
    • 1-2 teaspoons sriracha or to taste (sriracha is spicy, so taste before you add the second teaspoon)
    • Pinch of salt
    • ¼ cup water (add more if you want it thinner)

    In order to make creamy almond butter dressing, all you need is a high-speed blender. Once blended, almond butter dressing can be used for a variety of recipes.

    Why do we store almond butter upside down?
     
    We store almond butter upside down to make sure that the oil is redistributed to the top and give you nothing but creamy butter all throughout. However, you have to make sure that the lid is tightly sealed to avoid leakage.

    When considering what recipes go well with almond butter dressing, I always focus on the ingredients in the dish I plan to dress. For instance,  the use of soy, ginger, and miso are flavors in Asian dishes.

    Equipment

    • NutriBullet Pro - 13-Piece High-Speed Blender/Mixer System with Hardcover Recipe Book Included (900 Watts)
    • San-J Organic Gluten Free Soy Sauce Tamari -- 10 fl oz - 2 pc

    Ingredients
      

    • ¼ cup almond butter
    • ¼ cup fresh squeezed lime juice
    • 1 Tablespoon soy sauce or Tamari
    • 1 Tablespoon fresh minced ginger
    • 1 Tablespoon white or yellow miso
    • 1 clove garlic minced
    • 1-2 teaspoons Sriracha or to taste Sriracha is spice, so taste before you add the second teaspoon
    • 1 pinch salt
    • ¼ cup water add more if you like your dressing thinner

    Instructions
     

    • Add all the ingredients to a high-speed blender, except the almond butter.
    • If you add the almond butter last, it won't stick to the sides of the blender.
    • Blend on high until smooth.
    • Store in a covered container in tthe refrigerator until ready to use.
    • Almond butter dressing will last for 5 days in the refrigerator.

      I'm used to eating Balsamic Vinagrette however, now I don't use oil so it's been challenging. Then I made this last night and it was delicious. I could taste each ingredient. I'll be adding this to my colection
