Although there are several claims of fame of who invented buffalo sauce, credit generally goes to Teressa Bellissimo, a Buffalo, New York bar owner, for inventing buffalo wings at Anchor Bar in 1964.
Traditionally buffalo sauce is made with cayenne pepper-based hot sauce, melted butter, and vinegar are the standard base of Buffalo wing sauce, which may be made mild, medium, or hot. Other ingredients, although less dominant, are also common, such as Worcestershire sauce and garlic powder.
However, over the years, many vegan buffalo sauces have hit the shelves, making it easy for plant-based eaters to enjoy buffalo-flavored foods.
And, in today's world, buffalo doesn't necessarily mean hot. Now, buffalo sauce comes in mild, medium, and spicy options.
Vegan Friendly Buffalo Sauce Brands
Although I sometimes make homemade buffalo sauce for buffalo cauliflower, which is oil-free, I opted for a store-bought bottled version to make this buffalo potato recipe. Although there are vegan options, check the labels if you don't use oil.
- Franks Red Hot Buffalo Sauce: This sauce contains canola oil., so if you follow a whole foods plant-based diet, skip this one.
- Primal Kitchen Buffalo Sauce: This brand has mild, medium, and spicy options. But it also contains olive oil, so skip it if you follow a whole-food, plant-based plan.
- Yellow Bird Wing Sauce: This sauce is organic, vegan, and oil-free. I have every flavor and LOVE this brand. It's made in Austin, Texas.
Buffalo Potatoes Ingredients
- Baby Potatoes: New potatoes, also called baby potatoes, have been dug up from the ground before fully maturing. Commercial farmers sometimes harvest young potatoes early, allowing other potatoes to grow underground.
- Buffalo Sauce: Choose a vegan buffalo sauce.
- Green Onions: Green onions are light in flavor and add flavor to the buffalo potato recipe.
- Vegan Ranch Dressing: I make vegan ranch dressing, or you can buy bottled vegan ranch dressing.
Buffalo Potatoes Ingredient Substitutions
- Choose any potatoes; just cut them into equal sizes, so they cook evenly.
- Make homemade buffalo sauce, or choose a vegan brand that meets your plant-based plan.
- Chives are an excellent substitute for green onions.
- If you don't like ranch dressing, try vegan bleu cheese dressing, which is excellent with buffalo potatoes.
- Or skip the drizzle of dressing and eat the potatoes without any ranch or bleu cheese.
How to Make Buffalo Potatoes
First, parboil the potatoes for 4 minutes. This softens the potatoes and makes them porous, so they absorb the buffalo sauce.
Then, toss the parboiled potatoes with half of the buffalo sauce and place them ina container for a few hours or overnight, for the best flavor.
Spread the potatoes evenly in a single layer on a baking sheet prepared with parchment paper or a silicone baking mat. Or, if air frying, place in a single layer on an air fryer pan.
Baking
- Preheat the oven to 400 degrees.
- Cook potatoes for 35 minutes.
- Half way through cooking, flip potatoes with a spatula.
- Remove from the oven.
- Transfer to a bowl and add the remaining buffalo sauce; toss to coat.
- Sprinkle with green onions.
- Drizzle with ranch dressing.
Ar Frying
- Preheat the air fryer to 400 degrees.
- Cook potatoes in a single layer for 15-17 minutes, flipping and tossing halfway.
- Air fry until potatoes are golden brown and crisp on the outside, and tender when pierced with a fork.
- Transfer to a bowl and add the remaining buffalo sauce; toss to coat.
- Sprinkle with green onions.
- Drizzle with ranch dressing.
Recipe FAQs
