When I decide to make a bowl, I always plan the ingredients around savory and satisfying flavors. Roasted cauliflower, for instance, is one of my favorite vegetables to cook with because it is so porous and absorbent. As a result, cauliflower is the perfect vegetable for a curried cauliflower bowl recipe.
To make curried cauliflower into a savory bowl, I added roasted chickpeas, red onions, brown lentils, tri-color quinoa in a homemade tahini curry sauce.
PREPARING THE CURRIED CAULIFLOWER RECIPE
Cauliflower, for example, roasts at the same rate as the chickpeas and red onions. For this reason, all three can be roasted together on one pan.
First, the cauliflower needs to be cut into bite-sized florets. Because I don't plan to cook with oil, I rinsed the cauliflower a second time. Then, the seasonings will stick to the cauliflower.
Additionally, I pre-season the cauliflower, onions, and chickpeas so that I can roast them together.
THE COMBINATION OF THE SPICES IS THE KEY
Although curry is the focus, I enhance the curry seasoning with other savory spices:
- Garlic powder
- Sea salt
A COMBINATION OF LENTILS AND TRI-COLOR QUINOA
The curried cauliflower bowl isn't complete without lentils and tri-color quinoa as a base to the bowl. Both rich in protein, quinoa, and lentils are both savory and delicious. Together, they make a perfect marriage.
As I have stated in previous blog posts, I love quinoa! And I also love Trader Joe's pre-cooked, steamed brown lentils. Of course, you can also cook your own lentils, but I buy Trader Joe's lentils as a staple in my refrigerator if you want to save a step.

LAYERS AND LAYERS OF GOODNESS IN ONE BOWL
For each bowl, I started with half a cup of lentils and 1/2 cup of tri-colored quinoa. Next, I added a healthy serving of the roasted curried cauliflower, red onions, and chickpeas.
Then, I added fresh chopped parsley and drizzled a fabulous homemade tahini curry sauce. Subsequently, the tahini curry sauce brings the curried cauliflower bowl altogether.
THE TAHINI CURRY SAUCE IS OH SO DELICIOUS
As with most recipes, the secret is the sauce. And this sauce is ridiculously simple. All you need, for instance, is 5 ingredients:
- Lime Juice
- Curry Seasoning
MEAL PREP AND PACK IT UP FOR LUNCH...
Similar to most of my recipes, I always plan for lunch ideas during the week. Curried cauliflower recipe, for example, is easy to make and even easier to pack for lunch.
When I plan, not only do I have a great dinner, but I have lunch for the week. If you aren't into leftovers, think out of the box, and add the curried cauliflower to:
- A wrap sandwich
- Put it on top of brown rice.
- Eat the cauliflower on its own
