I love summertime because we can cook on the grill and minimize the heat and mess inside the house. In Arizona, the temperature is about 115 degrees this week so that we could grill this tofu without a grill... haha. But Paul is the grill master, doing all the work for this grilled tofu kabobs recipe.
Grilled Tofu Shish Kabobs Dinner Ingredients
- Extra Firm Tofu: I prefer using extra firm tofu that requires little to no pressing. Extra-extra form tofu, sometimes called sprouted tofu, requires no pressing.
- Red Wine Vinegar: Red wine vinegar is used in the tofu marinade and the tomato cucumber salad.
- Garlic: I prefer using fresh minced garlic for the best flavor.
- Green Goddess Seasoning: I used Trader Joe's Green Goddess Seasoning. It consists of minced onion, salt, granulated garlic, ground black pepper, and a foursome of green herbs and veggies: dried chives, dried green onion, spinach powder, and dried parsley.
- Za'atar Seasoning: Za'atar is a spice blend composed of herbs such as thyme, oregano, marjoram, or a combination of the three, along with other spices including sesame, sumac, cumin, or coriander.
- Lemon Juice: Fresh lemon juice is used in the marinade and the salad.
- Whole Wheat Pita Bread: I bought an oil-free whole wheat pita from Trader Joe's.
- Persian Cucumbers: Persian cucumbers are thin-skinned and only grow to be about five to six inches long and remain quite narrow. These baby cukes are nearly seedless and extra crisp rather than watery and have a mild, sweet flavor similar to English cucumbers
- Grape/Cherry Tomatoes: I used grape or cherry tomatoes cut in half.
- Kalamata Olives: Kalamata olives are more intensely flavored than other varieties of black olives and have potential health benefits because they have a lot of healthy fats
- Red Onion: Red onions, in particular, contain anthocyanins, plant pigments in the flavonoid family that give red onions their deep color. These may protect against diabetes and certain types of cancer.
- Maple Syrup: A little maple syrup takes the bite out of the vinegar in the dressing for the salad.
- Dill: Fresh dill gives the salad a lot of flavor.
- Hummus: Hummus is used under the grilled tofu kabobs to add flavor.
Grilled Tofu Kabobs Dinner Ingredient Substitutions
- Chickpea tofu is an alternative to eating soy tofu.
- White wine vinegar
- White wine vinegar can be used as a 1:1 substitute in recipes that don't require color, as the two have similar acidity levels. However, red wine vinegar can give salad dressings a pinkish hue, while white wine vinegar blends better.
- Choose any Mediterranean seasoning blend.
- Choose any tomatoes that are less watery.
- Try white or yellow onions. Or I like pickled red onions.
- Date syrup is a natural sweetener similar to maple syrup.
- Use half the amount specified in the recipe when using dry dill instead of fresh dill.
- Any hummus works well.
How to Marinate the Tofu and Prepare the Grill Sticks
- Fill a tall glass with water and soak the wooden sticks. Or cover the sticks with water in a shallow container.
- Remove extra firm tofu from the package, drain the fluid, and dry the tofu with a paper towel.
- Remove firm or extra tofu from the package, dry it, and press with a tofu press.
- Cut the tofu into ½-inch cubes.
- In a shallow refrigerator-safe container, whisk together garlic, red wine vinegar, Za'atar seasonings, and lemon juice.
- Add the cubed tofu.
- Marinate for 30 minutes, or I prefer marinating overnight for the best flavor.
- Carefully thread the marinated tofu onto the soaked kabob sticks.
- Depending on the size of the sticks, add the tofu cubes with a bit of space between each cube. I was able to thread eight pieces of each stick.
How to Make a Simple Cucumber Salad
- In a bowl, combine the cut tomatoes, cucumbers, red onions, kalamata olives, red wine vinegar, lemon juice, and maple syrup.
- Toss to coat.
- Refrigerate until ready to use.
How to Grill Tofu Kabobs (+Other Cooking Options)
Grilled Tofu Shish Kabobs
- Preheat the grill to 400.
- Lay the skewered tofu sideways and cook for 8 minutes, flipping every 2 minutes.
- Brush on extra marinade as the tofu kabobs cook.
Air Fryer Tofu Shish Kabobs
- Preheat the air fryer to 375 degrees.
- Place on the air fryer pan, and cook for 8-10 minutes, flipping every few minutes.
- Using a grill brush, brush extra marinade on the tofu skewers when you flip them.
Baked Tofu Shish Kabobs
- Preheat the oven to 400 degrees.
- Place tofu kabobs in a baking pan lined with parchment paper or a silicone mat.
- Cook for 25 minutes, flipping the kabobs every 5 minutes, brushing the extra marinade on the tofu kabobs when to turn them in the oven.
How to Make Mediterranean Tofu Kabobs Dinner
- Use a spoon to add a small amount of hummus on the base of the plate.
- Smear the hummus in a line using a spoon or knife.
- Place the tofu kabobs on top of the hummus.
- Add a small amount of cucumber tomato salad on the plate.
- Serve with a whole wheat pita.
Serving Suggestions
- Fill the whole wheat pita with salad, hummus and pieces of grilled tofu.
- Remove the tofu kabobs from the sticks, drag through the hummus, and enjoy with the pita bread and cucumber tomato salad.
- Eat the tofu on top of the cucumber tomato salad and at the pita on the side.
Recipe FAQs
Preheat the grill, and make sure to marinate the tofu kabobs. Oil is not necessary.
To infuse more flavor, leave it to marinade for up to 2 days before cooking it up. Top tip: Don't ditch the leftover marinade when you come to cook your tofu. Add it to the pan when cooking, or heat it on the side and add it when plating up for an extra saucy serving!
I prefer the heartier texture of a firm, non-silken tofu. Non-silken tofu has the added benefit of being more porous, allowing it to draw more flavor from sauces and marinades.

Tomato Salad
- 1 Persian cucumbers sliced thin
- ½ cup grape tomatoes cut in half
- ¼ cup kalamata olives sliced
- ¼ cup red onions sliced thin
- ⅛ cup fresh dill chopped
- 1 teaspoon maple syrup
- 1 Tablespoon red wine vinegar
- ½ lemon juiced
Other Ingredients
- ½ cup hummus of choice
- 4 pieces whole wheat pita
