When I crave comfort food, I yearn for salty and savory. In fact, I have never really liked sweets. As a teenager, I worked at a candy store, so maybe working with chocolate and candy all day made me lose a taste for sweets. But, I do love crispy french fries! Although I am not much of a dessert person, I have never met a fry I didn't like. Unfortunately, french fries come with a lot of grease and fat. So, in order to indulge, I needed to figure out how to make crispy oven-baked fries.
Even though I love my air-fryer, sometimes I prefer oven-baked fries, but no worries, I will give you both versions in the recipe below.

HOW DO I CUT THE POTATOES FOR PERFECT OVEN-BAKED FRIES?
First, my trick to perfectly cut french fries is using a Mandoline. This very inexpensive kitchen tool helps to cut perfectly even fries. Although I prefer a half-inch cut, the Mandoline allows for a variety of sizes. I cut the fries and put them in a bowl of cold water until I am ready to cook.
The next trick to perfect oven-baked fries is to preheat the oven to 400 degrees BEFORE putting the potatoes in the oven. Once the oven is hot, the fries cook evenly.
Additionally, my Copper Chef Crisper Pan is literally a superhero; nothing sticks and everything cooks equally. It's almost like an air fryer in the oven, but it's much cheaper and has multiple purposes.
SO, HOW DO I MAKE CRISPY OVEN FRIES?
For four servings of fries, for example, you only need two large baking potatoes. Then, I scrub the potatoes with a brush and water to remove any debris. Next, I cut the potatoes lengthwise in half. If you want to peel the potatoes, feel free, but I like the skins on.
Using a mandoline, with the ¼ inch blade, secure the skin side with the prongs, and slide the potato, flesh down, carefully along the blade.
Once the oven is pre-heated, I always wash my fires a second time to remove any extra debris as well as get the potatoes nice and wet. Using a colander, rinse the potatoes a second time. Shake any excess water from the colander, but do not dry the potatoes. Return the potatoes to the bowl. Using a generous amount of garlic powder and garlic salt, toss the seasonings in the bowl.
You may add any other spices and flavors you wish in powder form. If you are avoiding salt, use other seasonings. If not, salt and pepper can be added as well. The last and final secret to perfectly crispy fries is spreading them evenly on the pan. Do not allow any fries to overlap or touch.
GREAT SEASONING COMBINATIONS:
- Fresh dill and garlic powder
- Smoked paprika and salt
- Creole seasoning
- Chili Powder and fresh lime
- Rosemary and garlic
- Garlic powder and fresh ground pepper
- Cajun seasoning
- Vegan Parmesan Cheese
- Lemon pepper
Regardless of the flavors you choose, oven-baked fries are oil-free, guilt-free, and delicious.
FAQs
AIR-FRYER OPTION FOR SKINNY FRIES
If you are in a hurry, you can definitely use an air-fryer! Similar to my Steak Fries Air Fried and Crispy recipe, oven-baked fries are oil-free. The difference, however, is the cooking time.
- Set the Air-fryer to 400 degrees.
- Place a single layer of seasoned sliced potatoes in the base of the air-fryer
- Set timer to 11 minutes
- Cook for 5 minutes
- Toss the basket and fries around
- Cook for an additional 6 minutes.
- Serve

Oven Baked Fries
Ingredients
FRENCH FRIES
- 2 large washed skin on baking potatoes
- ⅛ cup Garlic Powder more to taste
- 1 Tablespoons Fresh Ground Pepper optional
- Sea Salt or garlic salt to taste
SRIRACHA KETCHUP (optional)
- ½ cup Organic sugar free Ketchup
- 2 Tablespoons Sriracha
Instructions
PREPARE POTATOES
- Using a mandoline, on ¼ inch setting, cut the potatoes into equal-sized fries.
- Place them in a bowl of cold water, after each potato is cut to prevent browning.
- Make sure the water is high enough to cover the potatoes.
PREPARE PAN/OVEN
- Preheat the oven to 425 degrees.
- Place a silicone mat or parchment paper on the large baking pan or use the Copper Chef Crisper Pan
PREPARE/SEASON POTATOES
- Drain the potatoes right before you plan to cook them.
- Using a colander, drain and shake all remaining water from the potatoes.
- Return potatoes to the empty bowl.
- Toss with seasoning.
- Place fries in a single layer on the pan.
- Cook for 35 minutes at 425 degrees until Crisp.
- I served with Sriracha ketchup, but feel free to choose your own dipping sauce.
AIR-FRYER OPTION
- Set the Air-fryer to 400 degrees.
- Place a single layer of seasoned sliced potatoes in the base of the air-fryer
- Set timer to 11 minutes
- Cook for 5 minutes
- Toss the basket and fries around
- Cook for an additional 6 minutes.
- Serve

Thanks for the corn bread recipe. I modified the ingredients to what I had on hand.
1 cup corn meal
1 cup Masa corn flour
1 Tablespoon baking powder
1/4 cup unsweetened applesauce
1/4 cup maple syrup
1 1/2 cups water
Baked at 350 degrees for about twenty minutes on parchment covered cooking sheet
Very nice sweetness, perfect thickness for eating with beans and rice.
