- Carrots: The fibers in raw carrots work much in the same way to bind toxins as charcoal, making raw carrots a key player in lowering estrogen levels and bringing back proper hormonal balance. A raw carrot salad daily aids the body in its natural detoxification process.
- Baking Potatoes: Whole potatoes aren't a bad carb. They provide many essential nutrients, like potassium, vitamin C and fiber. Potatoes also have resistant starches, which may contribute to supporting a healthy gut.
- Red Lentils: Lentils are low in sodium and saturated fat, and high in potassium, fiber, folate, and plant chemicals called polyphenols that have antioxidant activity.
- Celery: Celery is considered a kidney tonic and can promote kidney health. For all of those reasons, and also because drinking the celery juice is a non-caffeinated way to hydrate in the morning and give you an energy boost, celery is a great way to start your day.
- White Onion: Scientists have linked onions to many possible health benefits, most of which come from the antioxidants in onions. Antioxidants help prevent cell damage in your body. Research shows that one particular antioxidant, quercetin, protects health in several ways, such as fighting inflammation and boosting the immune system.
- Garlic: Garlic is a powerful detox food that promotes glutathione production by various liver enzymes.
- Vegetable Broth: I buy organic low-sodium, sugar-free vegetables broth from Costco.
- Turmeric: Turmeric also helps your body to detoxify by helping your liver to modify, inactivate and eliminate toxins and excess substances produced by the body (including hormones).
- Ginger: Due to the sharpness and tingling that is so characteristic of ginger, you could already guess: ginger is a powerful detoxifier.
- Herbs de Provence: The herbs de Provence blend traditionally includes thyme, oregano, summer savory, and rosemary.
- Salt: Salt enhances the flavors in the soup.
- Onion Powder: Onion powder gives the soup additional flavor.
- Garlic Powder: Garlic powder adds depth of flavor.
- Black Pepper: Black pepper can help detox the body. According to studies, it helps enhance the detoxification enzymes and reduces DNA damage. Combining black pepper with turmeric enhances the body's ability to absorb the turmeric benefits.
- Crushed Red Pepper: Cayenne also has healing properties, and herbalists have used it for years to build immunity, fight off colds, soothe ulcers, and help detoxify the body.

As I have often said, my crockpot is one of my favorite appliances. This soup tastes fabulous, but I also make it in the crockpot, so it cooks while you work.
- Place all ingredients in the crockpot.
- Cover and cook on high for 5-6 hours or low for 7-8 hours.
- Place about 4 cups of soup in a blender or use an immersion blender(do not blend entire crockpot; instead blend for only a few minutes to keep half the soup chunky)
- Pulse gently until semi-smooth and creamy-looking.
- Add back to the crockpot and stir to combine.
- Stir in the kale and parsley.
- Turn the heat off and allow to sit for 10 minutes before serving.
- The taste gets better with time.
- Add red wine vinegar before serving if you like a little tang.

- Use the right amount of liquid. There is very little evaporation in the slow cooker. If you’re adapting a regular soup recipe, it’s likely that you won’t need to use all the liquid called for. Put all your ingredients in the slow cooker and then pour the broth over top. It should cover the vegetables by about ½ inch. If you have excess liquid at the end of cooking, remove the lid for the last 30 minutes to let some of it evaporate.
- Root vegetables will take longer to become tender than, say, cauliflower. Nestle those items around the bottom and sides of the slow cooker, where they will directly contact the slow cooker’s heating element.
- Vegan recipes are best cooked for around four hours but can do a minimum of two or six hours (after which the vegetables start to get unpleasantly mushy).

Detox Lentil Vegetable Soup
Ingredients
Detox Soup
- 2 cups organic carrots peeled and sliced
- 2 cups organic baking potatoes diced small)
- 1 ¾ red lentils or lentils of choice
- 2 cups organic celery diced small
- 1 organic white onion diced small
- 5 cloves garlic minced
- 10 cups organic vegetable broth
- 2 teaspoons turmeric powder or freshly grated
- 1 teaspoon grated fresh ginger
- 2 teaspoons herbs de provence
- 1 teaspoon salt more to taste
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 2 teaspoons fresh ground black pepper
- 2 teaspoons crushed red pepper leave out if you are sensitive to heat
After Cooking
- 6 cups organic spinach stems removed, chopped
- 1 cup parsley chopped
- 2 organic lemons juiced; one lemon zested
- 1 Tablespoon red wine vinegar
Instructions
- Place all ingredients in the crockpot. .
