Even though Easter Sunday 2020 will be one we will all remember forever, let's make it special regardless of isolation. Easter Sunday, however, will go on, even if it means our families may be far away. Since Easter will look different to us this year, Paul and I intend to celebrate Easter with hope and great food. Hopefully, even in isolation and quarantine, we can enjoy a lovely meal with whoever is able to be with us this year. As a result, I hope you enjoy some of my vegan Easter recipes to help you to enjoy a happy vegan Easter.
Regardless if you live alone, or you are surrounded by your entire family, please take time to enjoy a good meal.
MY FAVORITE VEGAN APPETIZER EASTER RECIPES
Sometimes, on Easter, or other holidays, our family chooses to have appetizers or tapas. Instead of a sit-down dinner, we graze all day. So, here are my favorite vegan Easter appetizer recipes:
1. Skinny Cilantro Jalapeno Hummus Salad Dip
First, the base of this dip is cilantro jalapeno hummus, topped with a salad of spinach, quinoa, red onions, cucumbers, tomatoes in a lemon dressing.
2. Vegan Bruschetta
Another one of my favorite appetizers is a variety of different vegan bruschettas: Greek, Italian, Mexican and Asian.
3. Vegan Baby Portobello Mushroom Bites Recipe
Vegan Baby Portobello Mushroom bites, for instance, are easy and very filling. Not only are they bite-sized, but they don't last long on a plate.
4. Vegan Tangy Crockpot Meatless Meatballs
Regardless of how many times I make vegan crockpot meatballs, they vanish in minutes.
MY FAVORITE VEGAN EASTER SALAD RECIPES
As you know, I love salad; the more greens the better. For Easter, I generally have a bunch of my favorite salads!
1. Vegan Potato Salad
Creamy potato salad, for example, is one of my family's favorite salads, which is requested often.
2. Bean Salad
Colorful, and full of beans and veggies, everyone loves a flavorful bean salad for Easter dinner.
3. Vegan Waldorf Salad
The combination of apples, grapes, walnuts, and veggies in a creamy sweet dressing is my favorite salad for every holiday.
4. Grilled Caesar Salad
Although a grilled caesar salad requires grilling, it has very few ingredients and it is very elegant to serve with your Easter meal.
MY FAVORITE VEGAN EASTER ENTREES RECIPES FOR DINNER
1. Vegan Meatloaf
Lentil meatloaf is a GREAT vegan Easter recipe for the whole family! Not only can it be made ahead of time, everyone in my house devours it.
2. Vegetable Strudel
Vegetable strudel, with creamy mashed potatoes and gravy, can also be prepared ahead of time. Without a doubt, this is a new favorite vegan Easter recipe at my house.
3. Vegan Fettuccine Alfredo
Everyone at my house loves pasta! And creamy garlicky Fettuccine Alfredo is requested often at my house. Again, the sauce can be prepared ahead of time, and the noodles only take a few minutes to cook.
4. Vegan Lasagna
Another family favorite, vegan lasagna, is a definite crowd-pleaser. So, if you are looking for a GREAT family favorite, try vegan lasagna.
From my family to yours, Happy Easter. And, this year, I am thankful for our health and look forward to better times ahead. May your family have a safe and happy holiday!
