Whenever I find a recipe my family likes, it's always a bonus when I can make multiple meals using the same base recipe. Seitan, for instance, makes three separate meals in one batch. And, the beauty of making a variety of recipes for seitan means I can meal prep three meals at a time. Regardless of the variety of recipes I make for seitan, I can always freeze any or all of the seitan to use later.
Most recipes for Seitan, however, contain oil, but Kathy's Oil-Free Mega Seitan Protein is oil-free! Personally, I prefer Bob’s Red Mill Vital Wheat Gluten when making seitan.
WHAT IS SEITAN?
Similar to meat, seitan protein packs a lot of protein as well as amino acids. In a 3 ounce serving of seitan, for instance, a serving contains 20 grams of protein, 1.5 grams of fat, and only 130 calories. So, for all those vegan skeptics out there who question where we get our protein, seitan provides 20 grams of protein.
Versatile, seitan can be used for a plethora of recipes. For example, I make “Reuben meat,” “roast beef,” Vegan Turkey and the list goes on.
Again, my recipe is oil-free, however, it's very tasty, easy to make, and one recipe makes multiple meals. Seitan is basically soy-free, nut-free, vegan wheat meat.
But, seitan is NOT GLUTEN FREE, so if you have issues with gluten, stay clear of this recipe.
WHAT RECIPES CAN I MAKE USING SEITAN?
Once prepared, the seitan is cut into thin slices can be marinated for any particular purpose. Similarly, seitan dough can be shaped into steak shapes as well. Some recipes for seitan I adore are easy to make and only require some marinade and a variety of cooking options.
SEITAN PHILLY CHEESE STEAK SANDWICH
One of my favorite way to marinate seitan is for a Philly Cheese Steak Sandwich which is served with my Oven Baked Fries Perfect Crispy Oil-Free and Garlic.
For this recipe, I used a portion of Kathy's Oil-Free Mega Seitan Protein, sliced it thin, and marinated it overnight. Then, I prepared sauteed mushrooms, onions, and red bell peppers. Additionally, I topped it with my Vegan Nacho Cheese Sauce.
Another great way to use seitan steak is to make a BBQ Seitan Sandwich loaded with Vegan Harvest Apple Maple Dijon Slaw.
BBQ SEITAN SANDWICH WITH CHIPOTLE MAC AND CHEESE
Diversely, I planned to marinate and then cook my BBQ seitan in a crockpot to allow the flavors to brew a little longer. Using another part of the seitan loaf, I sliced it thin and marinated the 'meat,' and froze it. When I was ready to use make the recipe, I cooked the seitan in my crockpot.
Another great recipe for seitan is to make seitan steaks that can be grilled!
GRILLED SEITAN STEAKS WITH OIL-FREE SMOKY SCALLOPED POTATOES AND BRUSSELL SPROUTS
Instead of slicing the seitan, for this recipe, I form the dough into steaks and steam and bake the seitan in separate pieces. Again, the marinade is the key.
Next, I marinate the seitan steaks overnight and grill them to perfection.

BASE SEITAN RECIPE
Seitan Philly Cheese Steak
- ½ of seitan loaf sliced thin
- ⅓ cup soy sauce or Tamari
- ⅓ cup fresh lemon juice
- ¼ cup vegan Worcestershire sauce
- 2 cloves garlic minced
- 1 ½ Tablespoon garlic powder
- 3 Tablespoons basil
- 1 ½ Tablespoons parsley
- 1 teaspoon black pepper
- ¼ teaspoon Sriracha option, but suggested
- 8 ounces mushrooms
- 1 white or yellow onion sliced thin
- 1 red pepper sliced thin
- [½ cup vegan cheese sauce]
- Oil-free sandwich bun of choice
BBQ Seitan Sandwich
- ½ of seitan loaf sliced thin
- ½ cup your favorite BBQ sauce
- 2 cups vegetable broth
- [1 recipe Maple Dijon Slaw ]
- 1 additional cups vegetable broth when cooking in the crockpot
- Oil-free bun of choice
Vegan Steak Recipe
- 1 recipe seitan (formed into individual steaks before steaming and baking
- 4 Tablespoons soy sauce or Tamari
- 1 Tablespoon stone-ground mustard
- 2 teaspoons liquid smoke 1 Used hickory flavor
- 2 cloves garlic minced
- 2 Tablespoons vegan Worcestershire sauce
- 1 teaspoon Sriracha optional
- 2 teaspoons Monterey Steak Seasoning
Instructions
SEITAN PHILLY CHEESESTEAK
- Slice ½ the seitan loaf into thin sliced
- Combine marinade ingredients and whisk together
- Place ingredients in a refrigerator safe container.
- Add seitan slices and cover with marinade.
- Marinate overnight.
- In a large skillet, on medium-low, cook the seitan slices, and add marinade in small amounts throughout the cooking process until all marinade is gone.
- In the meantime, saute onions, mushrooms, and peppers.
- Heat cheese sauce in a small pan or in the microwave
- Toast buns in the oven.
- Add a generous amount of seitan to the bun.
- Top with onions, mushrooms, and peppers
- Drizzle cheese sauce over the top.
- I served with Baked French Fries
BBQ SEITAN SANDWICH RECIPE
- Slice ½ the seitan loaf into thin sliced
- Combine marinade ingredients and whisk together
- Place ingredients in a refrigerator safe container.
- Add seitan slices and cover with marinade.
- BBQ seitan can be cooked in a skillet just like the Philly Cheese Steak in a skillet on the stove following the same directions above. Or, you can use a crockpot.
- If using a crockpot, empty the contents of the container into the base of the crockpot and add 2 additional cups of vegetable broth.
- Cover and cook on low for 4-6 hours.
- Prepare the Maple Dijon Slaw in advance
- Toast buns in the oven.
- Add a generous amount of BBQ seitan to the bun and top with coleslaw
- I served with Chipolte Mac and Cheese
Seitan Steak Recipe
- Instead of forming a log shape before steaming and baking the seitan, form individual steak shapes with the dough, using your hands.
- Wrap the steak shapes in aluminum foil and follow the directions for steaming and baking.
- Then, combine all the marinade ingredients and whisk together.
- Place steaks in a refrigerator safe container and pour marinade over the top.
- Cover and marinate overnight.
- Preheat grill to medium-low (400 degrees)
- Cook for 7 minutes on each side.
- Steaks may also be cooked in a skillet on the stove on medium-low for 7-10 minutes on each side.
- I served with OIl-free Smokey Scalloped Potatoes
