Today, I had a chicken pot pie noodles epiphany. First, I made a vegan version of what my grandma used to call chicken pot pie noodles. I distinctly remember the flavors and the ingredients, so I figured why not make it another one-pot wonder. My family, my test kitchen critics, loved my chicken pot pie noodles recipe. And, when they like my food, the world is a happy place.
When my grandma made her chicken pot pie noodles, she always filled them with vegetables to trick my sister and me into eating as many vegetables as possible. So since I created a vegan version of her famous recipe, I used a variety of vegetables in conjunction with her recipe but gave it my vegan flare.
DELICIOUS CHICKEN POT PIE NOODLES IN ONE POT IN UNDER 20
Even though I love to cook, sometimes I'm all about easy, one-pot meals. For that reason, chicken pot pie noodles are one of my new favorite last-minute meals. Making an entire meal in under 20 minutes while only dirtying one pot is a win-win!
Whenever I create a new pasta dish, my goal is to add more vegetables than pasta. I generally shoot for a 2 to 1 ratio to highlight the veggies and eat little pasta. Then, I get the best of both worlds.
WHAT VEGGIES ARE IN MY CHICKEN POT PIE NOODLE RECIPE?
First, I used a combination of fresh and frozen vegetables. But, substitute frozen vegetables if fresh vegetables aren't available.
THE VEGGIES I USED IN MY CHICKEN POT PIE NOODLES RECIPE
- Garlic
- Onions
- Celery
- Carrots
- Mushroom
- Peas (Frozen)
- Thyme (fresh)
OTHER INGREDIENTS FOR CHICKEN POT PIE NOODLES
- Pasta of choice
- Vegetable broth (low-sodium)
- Trader Joe's Chicken Less Seasoning Salt (or substitute any poultry seasoning)
- Arrowroot powder(or substitute corn starch or flour)
- Nutritional Yeast
- White wine (I used Chardonnay) (optional)
- Chickpeas or Alpha Strips Grilled Chik'n Strips (optional)
It's an easy step-by-step process since all the ingredients cook in one pot. First, the garlic and onions are sauteed until the onions are translucent.
Then, add the celery, mushrooms, and white wine and cook until the mushrooms are browned, and the moisture begins to dissipate. Next, add the carrots, pasta, nutritional yeast, and vegetable broth (minus ½ cup). Hold off on the frozen peas for now.
Once the mixture begins to boil, add the Trader Joe's Chicken Less Seasoning Salt and bring to a boil. The next step is to cover and reduce the heat to low and cook for 20 minutes.
Meanwhile, combine the remaining ½ cup of vegetable broth and arrowroot powder. Or substitute cornstarch or flour for arrowroot powder.
Trader Joe's Chicken Less Seasoning Salt is now one of my new favorite seasonings. Over time, my spice rack has become quite a display.
Before making my condiments and dressings, the doors of my refrigerator looked like a grocery store aisle of sauces.
Now, my pantry door looks like the spice shelves at Whole Foods. But, I must say, this new Trader Joe's product piqued my interest.
But, don't worry, all poultry seasoning is vegan despite the word poultry in the name.
Despite its fabulous flavor, use this seasoning sparingly. Because it's a seasoning SALT, and a little goes a long way because it is salty. Remember, you can always add seasoning, but you can't remove it once you've added too much.
In my opinion, there is nothing worse than making an entire recipe and realizing it is too salty or spicy for your taste.
For that reason, be cautious with any seasoning, adding a little at a time until you reach your preferences.
For instance, my family loves it spicy, so I always provide additional sauce, dressing, or spice for everyone to choose spicy taste preferences regardless of how spicy a meal is.
Once the chicken pot pie noodles are cooked, add the arrowroot powder mixed with the vegetable broth, thickening the sauce, and the frozen peas.
Sprinkle fresh thyme for another layer of flavor and a pretty garnish to top it off.

Chicken Pot Pie Noodles
Ingredients
- 3 cloves garlic minced
- 1 white onion diced
- 5 stalks celery diced
- 16 ounces mushrooms sliced
- 3 large carrots sliced into equal sized coins, approximately ¼ inch each
- 1 cup frozen peas
- 4 cups low-sodium vegetable broth reserve ½ cup
- ½ cup nutritional yeast
- ¼ cup white wine optional
- 6 sprigs fresh thyme leaves removed from stalks (set aside for garnish)
- 8 ounces pasta of choice whole-grain or gluten-free I used Capellini whole-grain pasta)
- 2 teaspoons chicken-less seasoning or any poultry seasoning
- 2 teaspoons arrowroot powder corn starch or flour of choice (gluten-free works as well)
- 15 ounces chickpeas or 1 bag Alpha Grilled Chik'n Strips optional
Instructions
- Saute garlic and onions until onions are translucent.
- Add mushrooms, celery, and wine (optional) until mushrooms are browned
- Then, add carrots, pasta, vegetable broth (except the reserved ½ cup), nutritional yeast, and Trader joe's chicken-less seasoning salt. or poultry seasoning of choice
- Stir and bring to a boil.
- Cover and reduce temperature to low.
- Cook for 15 minutes, covered
- In the meantime, combine reserved ½ cup of vegetable broth with arrowroot powder, corn starch, or flour), and chickpeas (if using)
- 10 minutes into cooking, add the vegetable broth/arrowroot powder combination and the frozen peas into the pot.
- If using the mock chicken, cook it according to the directions, and set it aside. If using chickpeas, skip this step.
- Stir and replace the lid for the remaining 5 minutes.
- Turn the heat off, remove the lid, and stir. The sauce with thickening upon stirring.
- Spoon chicken pot pie noodles into bowls and garnish with fresh thyme.
- Add cooked Alpha Grilled Chik'n Strips on top (optional) if using

This is absolutely delicious. I was only one mouthful in & already thinking about when I would make it again! It’s very flavorful, just like chicken noodles that my Grandma used to make. I like how thick it gets (I’m not a fan of thin, watery soup). It’s chock full of veggies & noodles. I added more celery, carrots, & peas than the recipe called for, though, & also added my mock chicken straight into the soup in the last 5 min. Thank you for this recipe!

I clicked on the link for the Trader Joe’s Vegan Chicken-Less Seasoning Salt and find that it is no longer available through Amazon. Next, I checked Trader Joe's website directly and don't see it there either 🙁 Is there a substitute you would recommend? I am new at preparing vegan anything and want to start slowly and gradually adding to my kitchen repertoire. I've already added the food chopper to my Amazon wishlist 🙂 Any help would be appreciated!
