As summer winds down, I have a lot of zucchini from my garden. So, I compiled a collection of vegan zucchini recipes with help from fellow vegan friends who share my love of healthy, whole-food, plant-based recipes.

When is Zucchini in Season?
Although growing and harvest seasons may vary from region to region, summer is generally the time of year to enjoy fresh garden zucchini at a lower price than during the winter months.
In Arizona, zucchini is available in early May and is considered a summer squash. However, Arizona's growing season is year-round, and what's in season can vary by region.
Uses for Summer Zucchini
Zucchini has many uses in the kitchen! Spiralize it, grill, bake, saute, roast, stir-fry, pickle, or shave thinly into a salad; use these vegan zucchini recipe ideas to inspire your beautiful creations.
Luckily, zucchini is a versatile ingredient that you can eat in a salad or sliced and dipped in your favorite dip. You can also cook zucchini sautéed in a pan with a bit of good roasted with other veggies, sliced and tossed in pasta, a pot of soup, or turned into zucchini boats to hold a delicious mixture of tomatoes and fresh herbs for the perfect summer appetizer!
