Air fryer artichokes are a quick and simple appetizer or the perfect snack. These breaded artichokes cooked in the air fryer are crunchy on the outside and soft and delicate on the inside.

I love artichokes! Although we usually steam and grill artichokes, I made air fryer artichokes today with a crispy breading. Cooking artichokes in the air fryer takes minutes, and this artichoke recipe has very few ingredients, so it is as simple as it is quick. If you don't have an air fryer, however, you can also bake this recipe.

Artichokes are packed with powerful nutrients.
Each cup, or 170 grams (g), of cooked artichoke contains:
- Calories: 90
- Carbs: 20 g
- Fiber: 10 g
- Protein: 5 g
- Fat: 0.6 g
- Folate: 34% of the Daily Value (DV)
- Copper: 21% of the DV
- Magnesium: 15% of the DV
- Vitamin C: 12% of the DV
- Niacin: 10% of the DV
- Riboflavin: 10% of the DV
Potassium: 9% of the DV - Phosphorus: 9% of the DV
- Vitamin B6: 7% of the DV
Artichokes are low in fat while rich in fiber, vitamins, minerals, and antioxidants. Particularly high in folate and vitamin C, they also supply important minerals, such as magnesium, phosphorus, and potassium.
Air Fryer Artichoke Ingredients
- Artichokes: I used frozen thawed artichoke hearts cut in half. However, canned artichokes in water, halves, and whole artichokes, also work. Whole artichokes, however, require additional cooking time.
- Bread Crumbs: I make homemade breadcrumbs by toasting Dave's bread and crumbling it in the food processor.
- Nutritional Yeast: There are two types of nutritional yeast: unfortified and fortified. Unfortified yeast contains natural B vitamins that the yeast cells produce as they grow, but yeast cannot produce B12. Fortified nutritional yeast has added synthetic B vitamins (including B12, commonly cyanocobalamin).
- Plant Milk: Choose any unsweetened, unflavored plant milk. I like oat milk because it's naturally creamy.
- Dijon Mustard: Dijon mustard is added to the plant milk to give it a tangy, savory flavor.
Air Fryer Artichokes Ingredient Substitutions
- If you don't like artichokes, try Air Fried Mushrooms or Portobello Mushroom Fries.
- Another great artichoke substitute is zucchini for Zucchini Fries.
- Hearts of Palm are similar to the texture and taste of artichokes.
- Buy bread crumbs premade in a container.
- For gluten-free bread crumbs, use gluten-free bread or purchase gluten-free bread crumbs.
- White miso paste or soy sauce is often used as a substitute for nutritional yeast; however, if used in this recipe, the miso paste should be added to the milk mixture rather than the bread crumbs.
- Instead of plant milk, use an egg replacement product such as JUST Egg or unsweetened, unflavored plant-based yogurt.
- Stone-ground mustard is similar to dijon mustard.
How to Make Artichokes in the Air Fryer
- Begin my whisking the dijon mustard and plant milk in a shallow bowl.
- Combine the bread crumbs and nutritional yeast in a second shallow bowl and stir with a fork or spoon.
- Prepare an air fryer pan with parchment paper, or if using an oven, prepare a baking sheet with parchment paper or a silicone baking mat.
- Dip each artichoke piece in the milk mixture, dredge in the breadcrumb mixture, and place on the air fryer pan or baking sheet.
Cooking Options
Air Fryer
- Preheat the air fryer to 375 degrees.
- Place breaded artichokes in a single layer on the air fryer pan.
- Cook for 6-8 minutes until the artichokes are crispy.
- If cooking whole artichoke hearts, double the cooking time.
- For small air fryers, batch cook in a single layer, prepare a baking sheet, and keep cooked batches warm in a 325-degree oven.
Oven
- Preheat to 400 degrees.
- Arrange breaded artichokes in a single layer on the prepared baking sheet.
- Cook for 15-18 minutes until the artichokes are browned and crispy.
Serving Suggestions
I served these air fryer artichokes with Lemon Basil Dressing and garlic shed with fresh basil.
However, I also enjoy artichokes cooked in the air fryer with Vegan Ranch Dressing, Avocado Ranch Dressing, Mustard Dipping Sauce, or Vegan Southwest Dressing.

Ingredients

- 1 cup Bread crumbs

- 1 recipe Lemon Basil Dressing Or dipping sauce of choice
Instructions
- If using frozen artichokes, thaw completely in the refrigerator overnight or on the counter for a few hours.
- Canned artichokes (in water) should be drained, rinsed, and dried.
- In a shallow bowl, whisk the plant milk and dijon mustard together.
- Mix the bread crumbs and nutritional yeast in a second shallow bowl.
- Dip each artichoke piece in the milk mixture, then the breadcrumb mixture, and place on a prepared air fryer pan or baking pan in a single layer.
Air Fryer
- Preheat the air fryer to 375 degrees.
- If using a small air fryer, preheat an oven to 325 degrees and prepare a baking sheet with parchment paper or a silicone baking mat, to keep cooked artichokes warm during batch cooking.
- Cook for 6-8 minutes, depending on the size of the artichoke pieces.
Oven
- Preheat the oven to 400 degrees.
- Prepare a baking sheet with parchment paper or a silicone baking mat.
- Place breaded artichoke pieces on the baking sheet in a single layer.
