Although jambalaya typically refers to rice, today I'm making jambalaya pasta. Instead of opting for my Vegan Jambalaya Recipe using rice, my family requested a spicy pasta dish. So, I created another Easy One-Pot Meal, with a tasty Jambalaya pasta recipe my family loved.
Even though I don't generally eat vegan meat, the boys requested some vegan sausage, so I made two batches; one with mushrooms and one with vegan sausage.
So, if you're like me, and prefer the mushroom option, it tasted divine! On the other hand, the boys went crazy for the vegan spicy sausage, so you choose! Options always make cooking easier.
Ingredients in Jambalaya Pasta Recipe
- Mushrooms or Field Roast Spicy Sausage
- White onion
- Celery
- Garlic
- Cajun Seasoning (I used Louisiana Cajun Seasoning)
- Red bell pepper
- Canned diced tomatoes
- Penne pasta or pasta of choice
- Vegetable broth
- Vegan Worchestershire s
- Oat Milk
- Nutritional Yeast
- Vegan Parmesan Cheese
- Parsley
Cooking Jambalaya Pasta in one pot in under 20 minutes
Whenever I'm in a hurry, Easy One-Pot Meals make life so much easier, especially when it all cooks in one pot. Jambalaya pasta, for example, cooks in the same pot, making a quick and easy meal as well as an easy clean-up.
First, saute the garlic, onion, celery, and mushrooms (or sliced vegan sausage). Once the onions soften and become translucent, and the mushrooms or sausage are browned, add the red bell pepper and canned tomatoes.
Then, add the cajun seasoning and vegan Worchestershire sauce. If you prefer it spicier, add more cajun seasoning, but start with a small amount and adjust to suit individual preference.
Next, add the vegetable broth and pasta and bring to a boil, cover, and reduce heat to medium, and cook for 10 minutes. Stir occasionally.
Then, remove the cover, stir and add a blended mixture of plant milk and nutritional yeast. Cook uncovered an additional 5 minutes. The mixture will thicken when stirred and cooked.
Once the sauce thickens, serve and garnish with Vegan Parmesan Cheese and parsley. Of course, I also serve my Vegan Oil-Free Cornbread Recipe, a natural side for a Louisanna pasta.

Jambalaya Pasta
Equipment
Ingredients
- 8 ounces mushrooms sliced or 3 Field Roast Spicy Sausage, sliced
- 1 white onion diced
- 3 stalks celery diced
- 2 cloves garlic mined
- 1 red bell pepper diced
- 15 ounces canned diced tomatoes 1 can
- 10 ounces penne pasta or pasta of choice
- 4 cups vegetable broth
- 2 teaspoons vegan Worchestershire sauce I used Annie's
- 1 teaspoon Cajun seasoning I used Louisiana Cajun Seasoning
- ½ cup oat milk
- 3 Tablespoons nutritional yeast
- Salt and pepper to taste
Garnish
- Vegan Parmesan Cheese
- Parsley chopped
Instructions
- In a large stockpot, saute the garlic, onions, and celery until onions are translucent.
- Add either the mushrooms or the spicy vegan sausage.
- Cook until brown.
- Now add the red bell pepper, can of diced tomatoes, cajun seasoning, and vegan Worchestershire sauce.
- Add pasta and the vegetable broth
- Bring to a boil, cover, and reduce the heat to medium and cook for 10 minutes.
- In the meantime, blend the oat milk and nutritional yeast or whisk together.
- Next, remove the cover from the pot, and add the oat milk/nutritional yeast mixture.
- Stir uncovered; the sauce will thicken as it is stirred.
- Serve with veganvegan parmesan cheese on top and sprinkle with parsley.
- I served with oil-free cornbread.

Hi Kathy. Your recipe doesn’t include when to add pasta. I am assuming the same time as vegetable broth? You told us a one pot meal so I gather that we don’t pre-cook the pasta and then add it later. Thank you
